Insalata con polpettine di melanzane

Oggi fa freddo e piove, una bella insalata fresca è proprio quello che ci vuole! No, sto scherzando, questo piatto sarebbe più adatto all'estate ma visto che durante le feste natalizie mangio troppo ad un certo punto sento il bisogno di un piatto leggero.

Ingredienti per le polpette: 3 melanzane sbucciate e tagliate a dadini 1 cucchiaio di pane grattuggiato 1 uovo 2 cucchiai di parmigiano 1 mazzetto di rucola tagliata sottile 2 pomodori secchi 1 cucchiaio di pinoli
Lessare le melanzane per 30 min, scolarle e lasciarle raffreddare. Scolarle di nuovo per eliminare tutta l'acqua, io le lascio nel colapasta, ci poggio sopra un piatto fondo piccolo e con una bella pressione sono ben asciutte! Verso tutti gli ingrendienti nel robot da cucina e li frullo fino a ridurli in crema. Formare le polpettine e cuocerle nel forno preriscaldato a 200° per 30 minuti.

Insalata per 4 persone: 250 gr di spinaci 100 gr di rucola 4 carote tagliate a striscioline 2 finocchi affettati 2 cucchiai di semi di girasole 4 cucchiai di olio d'oliva 1 arancio 200 ml di yogurt (uso quello che preparo con la yogurtiera che è buonissimo, non troppo denso e soprattutto non aspro) olive nere pomodorini olio

In un tegame grande saltare a fuoco alto le carote e i finocchi nell'olio. Mescolare continuamente fino a farli diventare croccanti. In una ciotola preparare il condimento: versare l'olio, lo yogurt, la buccia e il succo dell'arancia e il sale. Preparare il piatto da portata facendo un primo strato con l'insalata e la rucola, disporre poi le verdure cotte e infine le olive e i pomodorini. Condire con la salsa allo yogurt.

Salad with eggplant balls

It's cold and rainy, a fresh salad is just what I need! No,I'm joking, this dish would be more suitable to summer time but as I'm eating a lot of rich food during this Christmas Holidays I feel like having something light and low calories now and then.
Do you like it Pat?

Ingredients:
eggplant balls: 3 eggplant, peeled and diced 1 Tbs grated bread 1 egg 2 tbs parmesan cheese 1 bunch arugula coarsely chopped 2 sundried tomatoes 1 Tbs pine nuts

Boil the eggplant for 30 mins, drain and let cool. Drain again to eliminate all the water. Combine eggplant, cheese, bread egg and arugula and blend until creamy. Form into balls and bake in preheat oven at 200° for 30 mins.

Salad for 4 people
250g baby spinach 100gr arugula 4 carrots cut into strip 2 sliced fennels 2 Tbs sunflower seeds 4 Tbs olive oil 1 orange 200ml yogurt (I prefer homemade yogurt because it's not sour) pitted black olives cherry tomatoes olive oil

In a large skillet put the carrots, fennels, seeds and olive oil. Cook, over high heat, stirring
frequently until crispy. Combine yogurt with olive oil, the zest and juice of the orange. Season with salt. In a dish arrange the salad, garnish with the olives, tomatoes and cooked vegetables. Serve with the yogurt dressing.

Pane alle olive

Le canzoni di Paul si dividono in almeno 3 categorie:
quelle che ho ascoltato di più, quelle che ho cantato di più e quelle che oggettivamente considero le più belle.
A volte la stessa canzone rientra in 2 categorie o anche in tutt'e tre, dipende dal giorno, dal tempo etc.
Alla prima categoria appartiene Fixing A Hole, durante uno degli anni delle scuole medie l'ho ascoltata quasi tutti i giorni, tutto il pomeriggio, non riuscivo a smettere, secondo me aveva un potere incantatorio. Quel periodo, forse il 1982, lo ricordo come il mio anno psichedelico, il secondo in realtà perchè il 1967, l'anno in cui uscì Sgt. Pepper è quello in cui sono nata.
Alla seconda categoria appartiene She's Leaving Home, che non ho ascoltato così spesso ma che ho cantato tanto e ancora lo faccio, dall'inizio: " Wednesday morning at five o'clock as the day begins...".
Alla terza categoria appartiene Back in the Ussr: un capolavoro, voce splendida.
Dicevo che ci sono almeno tre categorie perchè ognuno di noi fans ha le sue, forse ne ho dimenticata qualcuna importante, non so.
Per la ricetta, a proposito di categorie, scelgo la cosa che mangio di più: il pane, anzi, per la precisione ne mangio troppo, questa sarebbe un'altra categoria!


Ingredienti: 250 gr di farina di grano duro 250 gr di farina manitoba 160 ml di acqua 160 ml di latte 1 bustina di lievito di birra secco attivo 1 cucchiaio di sale 1 cucchiaio di zucchero olive verdi olio d'oliva
Setacciare le farine in una ciotola. Scaldare l'acqua e il latte fino a raggiungere i 35° circa e versare sulla farina insieme al lievito e allo zucchero. Aggiungere il sale in un angolo della ciotola lontano dal lievito. Lavorare gli ingredienti, raccogliere tutta la farina e incorporare il sale per ultimo. Coprire con la pellicola e lasciare lievitare per 2 ore. Stendere la pasta, con un pennello passarci l'olio d'oliva e cospargerla con le olive. Arrotolare la pasta nel senso della lunghezza e tagliare dei dischi di pasta spessi 2 cm. Posarli sulla teglia in cui avrete messo un foglio di carta da forno e lasciare lievitare per altri 45 min.
Preriscaldare il forno a 250 e infornare per 10 min, abbassare la temperatura a 180 e lasciare cuocere per altri 20 circa.

Olive bread

Paul's songs are divided into, at least, 3 categories:
The ones I have listened the most, The ones I have sung the most and the ones I consider objectively the most beautiful. Sometimes the same song falls into 2 or all 3 categories. It depends on the day, the weather, etc....Belonging to the first song is Fixing a Hole, during secondary school I used to listen to it everyday, for almost a year, all afternoon! I don't know why I chose this song, maybe it had got an enchanting power, I couldn't stop! I like to remember that time, maybe 1982, as my psychedelic year, my second actually, because I was born 1967 just when Sgt. Pepper was released. In the second categories there is She's leaving Home, same album. It's a song I haven't listened to so often but it's certainly the one I have sung a lot and I still do it, from the beginning: "Wednesday morning at 5 o'clock as the day begins...."Third categories: Back in the USSR. a masterpiece, wonderful voice.I was saying that there are at least 3 categories, in reality more categories can be found: each one of us fans has its own. As a recipe, talking about categories, I chose the thing that I eat
the most: bread. Actually I eat too much bread, but this should be another category!

Ingredients: 250gr manitoba flour 250gr durum wheat flour 160ml water 160ml milk 1Tbs sugar 1Tbs salt 1 sachet active dry yeast olive oil green olives

Sift flour in a bowl. Heat milk and water until warm and pour over the flour together with yeast and sugar. Add salt in a corner of the bowl avoiding contact with the yeast. Begin to work the ingredients, using up all the flower and incorporating salt at the end of kneading. Rest the dough covered with a cling film for 2 hours until doubled. Roll it into a rectangular shape, brush with olive oli and spread with olives. Roll up the doug beginning with long side. Cut into 2 cm slices and place in a pan over a baking sheet. Let rise again in a warm place about 30 mins. Heat oven to 250°. Bake for 10 mins, reduce heat to 180 and bake for 20 more mins.

Blueberry Muffins

C'è stata un'altra Signing Session la scorsa settimana a Londra e noi non eravamo lì. La notizia è arrivata troppo tardi , con solo 2 giorni di anticipo. Che rabbia! Quando ho visto la gente, venuta da tutto il mondo, fare la fila come abbiamo fatto noi 2 anni fa mi sono pentita di non essere andata. Solo parlando e riparlando con Manu mi sono convinta, oggi, che non era il nostro momento e che effettivamente un giorno per organizzare tutto era veramente poco. Ci consoliamo ricordando che almeno una volta lo abbiamo incontrato e che come dice Manu, 30 secondi o poco più della sua vita, Paul li ha dedicati anche a me, a noi tre.
Intanto mangiamoci un dolcetto :))

Ingrdienti: 1 1/2 tazza di farina bianca 1/2 tazza di farina integrale 3 cucchiaini di lievito 1/2 cucchiaino di sale 1/2 di bicarbonato 1/2 tazza di zucchero 1 uovo 4 cucchiai di olio di semi 3/4 tazza di latte 1 banana 1 tazza di mirtilli Per il crumble: 1/4 tazza di fiocchi d'avena 2 cucchiai di zucchero di canna e 2 di zuccheo bianco 2 cucchiai di margarina 1 cucchiaino di farina bianca e 1 di farina integrale

Mettere in una ciotola l'uovo e lo zucchero e lavorarlo con la frusta elettrica fino ad ottenere un composto spumoso. Aggiungere l'olio e il latte e mescolare. Setacciare a parte la farina, il lievito, il bicarbonato, il sale e unire tutto all'impasto liquido. Versare i mirtilli e mescolare ancora. Distribuire negli stampini da muffins imburrati.
Preparare velocemente il crumble: in una ciotola mescolare la farina, i fiocchi e lo zucchero. Unire la margarina e lavorare il crumble con le dita fino a che non diventi uniforme. Metterne una piccola quantità su ciascun muffin. Infornare a 160° per 30/40 min.

Blueberry Muffins
There has been another signing session in London and we weren't there! The news came out too late with only 2 days notice! When i saw on tv all the people , from all the world, queueing up like we did I began to regret not going, I'm so angry! Only by talking and talking over it with Manu, I convinced myself, today, that (effettivamente) one day to get organized was very little time. We are comforted by remembering that at least one time we have met him and that, as Manu says, Paul dedicated at least 30 seconds or more of his life just to me, to the 3 of us:))

Ingredients: 1 1/2 cup white flour 1/2 cup whole wheat flour 3 tsp baking powder 1/2 tsp salt 1/2 tsp baking soda 1/2 cup sugar 4 Tbs oil 1 banana 3/4 cup milk For the crumble: 1/4 cup oats 2 Tbs brown sugar 2 tbs white sugar 2 tbs margarine 1 tsp white flour 1 tsp whole wheat flour

Preheat oven to 160°. In a bowl mix egg and sugar, add oil and milk. Wisk together the flour, baking powder, baking soda and salt and add to the mixture. Stir to combine. Pour in berries, stir in to coat. Spoon batter into greased muffin pans, filling each cup about 2/3 full. In a small bowl combine the flour, oats and sugar. Add the margarine and work it with your fingertips until you have a uniform crumble. Sprinkle each muffin with a generous amount of crumble. Bake for 30/40 minutes.

Spaghetti con zucchine e zafferano

Durante gli ultimi mesi sono stata molto impegnata, ho trascorso 5 settimane in un B&B perchè stavamo facendo i lavori a casa, quindi non ho potuto cucinare e neppure fare foto.
Ora che sono tornata a casa mi rendo conto di quanto non mi piaccia rimettere in ordine quando non si riesce a trovare il metodo giusto, ci è voluto un secolo per decidere dove mettere tutte le mie, anzi le nostre cose e anche ora sto continuando ad eliminare gli oggetti inutili che inondano la casa.
In pratica, sto facendo un grande sforzo per cercare di diventare una persona organizzata (un sogno!) e per iniziare una nuova vita in una nuova casa. Ma, si sa, cambiare la nostra natura non è facile, infatti ho perso tutti i CD di Paul! Non uno o due Cd, ma tutti!
Fortunatamente dopo qualche settimana sono riapparsi, forse perchè ho smesso di cercarli. Mi perdo le cose continuamente e mi arrabbio per questo motivo almeno una volta al giorno.
In genere chiamo mio marito che è bravissimo a ritrovare le cose che perdo ma questa volta ho deciso di aspettare perchè, come mi dice sempre lui con ragione, perdo troppo tempo nella mia vita a cercare...
Tornando ai cibi, visto che per tutto questo tempo non ho potuto cucinare ho scelto la prima foto che ho scattato con la macchinetta che mi ha prestato Simone quando ho deciso di iniziare il blog. Ero contentissima del risultato anche se è una ricetta proprio semplice ma anche molto veloce: la ricotta era freschissima ed esaltava il profumo intenso dell'olio d'oliva bio che ho usato.


Per 2 persone: 2 cucchiai di ricotta zafferano 2 zucchine 3 cucchiai di olio d'oliva 1 spicchio d'aglio parmigiano
Ho usato un coltello taglia julienne e ho tagliato le zucchine nel senso della lunghezza evitando la parte interna. Cuocere le zucchine in un tegame, dopo aver scaldato l'aglio e l'olio, per circa 15 min. Aggiungere lo zafferano e la ricotta e mescolare. Cuocere gli spaghetti e saltarli nel tegame per un minuto. Condire con poco parmigiano.

I was very busy over the last months and spent 5 weeks in a B&B because we were having some works done in our home, so I couldn't cook nor take any pictures of course.
Now that I'm back home I realise how much I hate tiding up, actually it took me ages to find a place for everything and I'm still trying to get rid of all the useless things that inundated my house.
In a few words, I'm really making an effort to get more organized than I used to be and to leave a different life in a new house. But, as you know, changing our nature is not easy in fact I lost all my Paul CDs!!! Not just one or two but all of them!
Luckily, after a week they reappered, maybe because I stopped searching for them. I always misplace things and I get really frustrated when I can't find them. Normally I call my husband for help because he is great at finding the things I lose but this time I decided to wait because he says that I waste too much time looking for things and he is right.
Well, as I couldn't cook for all this time I choose the very first picture I took when I decided to start my blog, I was very happy with the result even if it's a very simple recipe and also very quick: ricotta cheese was so fresh and I liked the way it enhanced the flavour of the organic olive oil I used.

Spaghetti with zucchini and saffron

For two people: 2Tbs fresh ricotta cheese saffron 2 medium zucchini 3Tbs olive oil 1 clove garlic parmesan cheese
Using a julienne peeler cut zucchini lenghtwise into thin strips avoiding the seedy core.
Heat the olive oil and garlic in a skillet over a medium heat, add zucchini and sautè until golden and tender for 15 minutes.
Add saffron powder and ricotta and mix until well combined.
Cook the pasta in a saucepan of boiling salted water, drain and stir the pasta into the zucchini mixture.

Macca Veggie Burger

Oggi mi sono dedicata al giardinaggio, anche se non ho un giardino! Ho potato l'edera del mio balcone e l'ho messa in un piccolo vaso. Un rametto è nella foto sopra.

Il 22 Novembre del 2006 io, Pat e Manu abbiamo conosciuto Paul.
Ogni volta che ci incontriamo ripetiamo dall'inizio tutta la storia dell'incontro, avvenuto in occasione di una Signing Session a Piccadilly Circus.
Pat tempo fa ha notato che la storia, con il tempo, si arricchisce sempre di più di particolari: una parola, una sensazione, qualcosa di "importante" che ci era sfuggito di mente. I nostri ricordi ora sembrano appartenere ad un'altra dimensione, ad un mondo lontano nel tempo, popolato da fantasmi, cavalieri, maghi e fate in un susseguirsi avventuroso di eventi che ci ha portato al castello del re: una scrivania del Virgin Megastore di Piccadilly Circus. Dopo una lunga notte al freddo, trascorsa sul marciapiedi di Piccadilly e dopo circa 20 ore di fila, insieme ad una folla di gente proveniente da tutto il mondo, il giorno seguente siamo riuscite finalmente ad arrivare al trono. Il mio mito era lì e mi stava aspettando....un raffinato signore inglese con la voce più bella del mondo ha parlato con me e mi ha ascoltato per un momento che sembrava non finire mai...Mi ha dato la mano (io non avrei neanche osato sfiorarlo) e mi ha chiamato "Sweetheart". Era tutto vero o forse stavo sognando? Un istante dopo ero sulle scale del negozio e due simpatiche signore mi hanno aiutato a scendere mentre piangevo come una fontana...

Ritornando all'edera...

Dopo l'evento siamo andate ad Abbey Road per una veloce session fotografica e più tardi, passando davanti ad un giardino Manu ha strappato un rametto di edera che ci ricorda Londra e quel giorno speciale di 2 anni fa.

Panini

Ingredienti: 1 tazza di latte 1/4 tazza zucchero 1 bustina di lievito di birra secco attivo 4 tazze di farina 1/4 tazza margarina 1 uovo 1 cucchiaino di sale
In una ciotola ho setacciato la farina e aggiunto il lievito, lo zucchero e il sale. A parte ho mescolato il latte tiepido, la margarina, dopo averla sciolta a fuoco basso e l'uovo. Ho iniziato a lavorare gli ingredienti nella ciotola e poi ho trasferito il tutto su un piano leggermente infarinato e ho impastato per 5 minuti. Ho messo la pasta nella ciotola, l'ho coperta con la pellicola e un canovaccio umido e ho messo a lievitare per 2 ore vicino al termosifone, in questo modo l'impasto è raddoppiato velocemente. Ho steso la pasta in un rettangolo di circa 3 cm di spessore ed ho usato il taglia pasta più grande che avevo. Ho lasciato lievitare nuovamente per circa un'ora. Ho messo i panini nel forno preriscaldato a 180° e li ho lasciati cuocere per circa 20 minuti.

Hamburger

Ingredienti: 100 gr di olive nere snocciolate, tagliate a pezzetti 1 tazza di verdure cotte
1 1/2 tazza di riso integrale cotto 20 gr parmigiano 30 gr noci frullate 1 uovo 1 spicchio d'aglio olio d'oliva
Ho cotto le verdure in un tegame con due cucchiai di olio d'oliva e uno spicchio d'aglio. Per la ricetta della foto ho usato peperoni rossi e cipolle di Tropea, ma potete usare ovviamente le verdure che preferite. Ho rivestito di carta da forno una teglia di circa 20x30 cm e ho versato gli ingredienti precedentemente mescolati in una ciotola. L'impasto aveva circa 2 cm di spessore, quindi scegliete la teglia in base allo spessore che desiderate ottenere. Ho messo la teglia nel forno riscaldato a 180° per circa 45 minuti. Ho lasciato raffreddare e ho usato lo stesso taglia pasta dei panini per formare gli hamburgers.

I did some gardening today, even though I haven't got a garden! I pruned the ivy on my balcony and put a cutting in a small vase. A small branch is in the above picture.

On 22nd November 2006, Pat, Manu and I met Paul for the first time in our lives.
Every time we see each other now, we repeat the whole story of our night in Piccadilly Circus prior to an in-store signing session.
Pat has noticed that the story is getting richer and richer in detail as time goes by: a word, a feeling, something "important" that had slipped our mind.
Our memories now seem to belong to a different world, a distant past, a universe populated with ghosts, knights, magicians and fairies, an adventurous succession of events which led us to the castle of the king: a desk in the Virgin Megastore in Piccadilly Circus.
Although I had had to camp out in the cold the night before the signing, when the following day broke, after queuing for over 20 hours, I finally managed to reach the throne. My knight in shining armour was there waiting for me... a gentle Englishman with the most beautiful voice in the world chatted to me for what seemed like for ever but was really only a moment. Then he held out his hand to shake mine and called me "Sweetheart"... Was it real or was I dreaming?
All I remember is being helped down the stairs, crying tears of joy....

Back to the ivy...

The three of us then went to Abbey Road for a quick photo session. Passing by a nice house, my friends picked a small branch of ivy poking over the fence. That ivy reminds us of London and of the special day we spent there 2 years ago.



Hamburger buns
1 cup milk 1/4 cup sugar 1 sachet active dried yeast 4 cups flour 1/4 cup margarine, melted 1 egg, beated 1tsp salt
In a large bowl, mix flour, salt, sugar and yeast. In a small bowl combine warm milk with egg and margarine, then add to the floour mixture. First I mix all ingredients in the large bowl then I knead it on a lightly floured surface for at least 5 minutes until smooth. At that point put the dough in the bowl, cover it and let rise until doubled in volume, about 1 1/2 hour. I made these buns on a cold day, so I covered the bowl with cling film and wet dish towel and put it by the room heater. Put back on floured board and roll out about 2 1/2 cm thick. Cut with large size biscuit cutter. Place buns on baking dish and let rise until doubled. Bake at 180° for 20 minutes.

Hamburgers
100 gr black pitted olives (cut in small pieces) 1 cup cooked vegetables (red bell peppers and red onions) garlic 2 Tbs olive oil 1 1/2 cups cooked brown rice 20 gr parmesan cheese 30 gr walnuts, finely chopped 1 egg

In a skillet, cook vegetables and 1 clove garlic with olive oil. I used red peppers and red onions.
In a bowl mix all ingredients. Line base and sides of a baking dish, about 20x30 cm, with non-stick paper. Spoon the mixture (which was 1 1/2 cm thick) in the dish and bake at 180° for about 45 minutes. Let cool.
Use the large size biscuit cutter to form the hamburgers.
