Cena gourmet per due

Questo e il menù con cui partecipo all'iniziativa di Giulia, Rossa di Sera, che ha proposto di preparare un cenetta gourmet per 2 persone a 15 euro!





E' stata un vera sfida questa volta perchè volevo pubblicare il menù completo, ho iniziato a preparare qualcosa sabato mattina e sono riuscita a finire e a fotografare tutto domenica, giusto in tempo per il pranzo ;)
Ho faticato un pò per fare tutti i conti ma sono proprio contenta di avercela fatta nei tempi stabiliti e di aver colto questa occasione per arricchire il mio menù con ricette nuove.
Il costo totale e di 9, 37 euro, ho anche risparmiato :))

Zucchine con crema di fave fresche e pecorino, riso basmati alla paprika con dadolata di peperone rosso e sale rosso delle Hawaii

Per la ricetta mi sono ispirata a quella di Antonio Scaccio, alla quale ho apportato delle varianti e che è  contenuta nel bellissimo libro Cucina Vegetariana Golosa


4 zucchine tonde 0,70 euro
1 patata 0,13
200 gr fave fresche 0,50
30 gr pecorino grattugiato 0,29
20 gr parmigiano grattugiato 0,30
100 gr riso basmati 0,63
1/2 peperone rosso 0,30
olio d'oliva
paprika
erba cipollina

Totale: 2,85 euro

Lessare le zucchine intere per 12 minuti. Lessare le fave fresche per circa 5 minuti, togliere la buccia e frullarle. Aggiungere una patata lessa schiacciata e amalgamare. Condire con sale, olio e i due formaggi grattuggiati. Riempire le zucchine e cuocere a 200 per 15 minuti. Lessare il riso, scolarlo e saltarlo in padella con olio, sale, paprika e erba cipollina. Tagliare il peperone a dadini, cuocerlo per 2/3 minuti a fuoco alto con olio d'oliva, condire con sale rosso o altro sale aromatizzato.

Involtini di verza con ricotta e zucca e pomodorini con purè di piselli

Totale: 4, 11

Lessare le foglie di verza per un paio di minuti e immergere in acqua fredda.  Scolarle e lasciarle raffreddare su un canovaccio. Cuocere la zucca tagliata a pezzi in un tegame con aglio e poco olio. Durante la cottura, se necessario aggiungere acqua per evitare che si arrostisca. Frullare la ricotta con la zucca, unire 1/2 uovo sbattuto e condire con sale e pepe. Lessare i fagiolini per 12 minuti. Preparare gli involtini: mettere un cucchiaio colmo di ripieno in ognuna delle 4 foglie di verza e aggiungere alcuni fagiolini interi cercando di premerli all'interno del ripieno. Chiudere gli involtini con lo spago da cucina e cuocerli nel tegame coperti, a fuoco basso per 10 minuti.

Lavare i pomodorini, tagliare la parte alta e vuotarli. Ungerli con olio e cuocerli in forno, rovesciati per 10 minuti a 250.
Lessare i piselli, condirli con sale e olio e frullare. Aggiungere la panna e mescolare. Farcire i pomodorini usando la sac à poche.
Preparare il piatto, condire con olio oliva e decorare con semi di papavero.

Sorbetto alla frutta con cialdine al miele

200 gr banane 0,60 euro
150 gr fragole + 2 intere per decorare 0,60
succo di mezzo limone
100 gr + 1 cucchiaio di zucchero 0,15
50gr mirtilli freschi 0,70

Totale: 2, 05 euro

Per il sorbetto ho usato il Bimby, quindi ho preparato lo zucchero a velo poi ho aggiunto la frutta congelata a pezzi e il succo di limone ed ho frullato secondo la ricetta del libro base.

Per la decorazione:
Honey Florentines di Martha Stewart
1 cucchiaio di burro 0,12
1 cucchiaio di zucchero di canna 0, 3
1 cucchiaio scarso di miele 0,20
1 cucchiaio di farina 0,1
1 pizzico di sale

Totale: 0, 36

Sciogliere in un pentolino a fuoco basso il burro, lo zucchero e il miele. Togliere dal fuoco e aggiungere la farina e il sale. Mescolare. Su un foglio di carta da forno disporre l'impasto per le cialdine, 1/2 cucchiaino ciascuna, distanziandole l'una dall'altra di circa 5 cm. Cuocere in forno a 180/190, fino a che abbiano assunto un colore ambrato.

Servire il sorbetto usando uno stampo tondo, decorare con la fragola, le cialdine e i mirtilli cotti precedentemente con un cucchiaio di zucchero e uno di acqua per pochi minuti.

Gourmet dinner for two at 15 euro!
This is the menu I chose to enter in the contest organised by Rossa di Sera who suggested making a gourmet dinner for two people for only 15 euro!
It was a real challenge this time because I wanted to post the complete menu on the same day. I started by preparing something on Saturday morning and managed to finish it all and take the photos on Sunday just at luchtime :))
I strived to calculate every single cost, but I was happy I made it on time and on budget. Total cost is 9.37 euro, I had saved up!



Zucchini with fava beans puré and pecorino cheese, basmati rice and diced red pepper with Hawaiian Red Salt
For this dish I was inspired by a recipe made by Antonio Scaccio. The recipe, on which I made some variations, is contained in his fabulous book, Cucina Vegetariana Gourmet
Ingredients:
4 round zucchini
1 boiled potato
200gr fresh fava beans
30gr grated pecorino cheese
20gr grated parmigiano cheese
100gr basmati rice
olive oil
paprika 
chives
Place the zucchini in boiling water for 12 mins then put in cold water. Boil the fava beans for 5 mins, remove the peal then put in blender and reduce to a puré. Add the mashed potatoes and mix. Season the puré with salt, oil and cheese. Cut a slice off the tops of zucchini and, using a melon-ball spoon, empty the zucchini. Fill them with the fava beans mixture. Cook at 200° for 15 mins. Boil the rice, drain and sauté in a pan with oil, salt, paprika and chives. Cut the red pepper into small cubes, cook over high heat for 2/3 mins. In a serving dish, put the zucchini, arrange the basmati rice on a side using a serving circle, garnish with the red pepper and season with red salt or any aromatic salt of your choice.


Cabbage rolls with ricotta cheese and butternut squash, cherry tomatoes with peas puré
Ingredients:
4 cabbage leaves
200gr butternut squash
180gr ricotta cheese
1 egg
70gr green beans
220gr cherry tomatoes
100gr fresh peas
2 Tbs whipped cream
olive oil
garlic
Boil the cabbage leaves for a couple of minutes, drain and put in ice cold water. Drain and place on towel to dry. In a pan heat some olive oil with one clove garlic, add the squash cut into small chunks and cook until soft. If necessary,add a little water to avoid it gets brown.
In a food processor, blend the squash with ricotta cheese, add half beaten egg then season with salt and pepper. Boil the green beans for 12 mins. To make the cabbage rolls, place 1 Tbs of the mixture into the center of each leaf, put some green beans on the mixture and press down the center of it. Roll leaf, folding ends in then place the rolls in a pan. Cook with some olive oil, over low heat, for 10 mins. If needed, fasten the rolls with cooking string.
Cut the tomatoes in half, empty out the inside and put  in an oven dish with the cut side down. Coat them with olive oil and bake 10 mins at 250°.
For the peas puré, boil the peas, drain, season with oil, salt and blend. Add the cream and mix well. With a sac à poche fill the tomatoes. Decorate the dish with poppy seed and a dash of olive oil.

Fruit sorbet with Honey Lace Cookies by Martha Stewart
Ingredients:
200gr bananas
150gr strawberries plus 2 whole for decoration
half lemon juice
50gr blueberries
I used my thermomix for this sorbet recipe. Place sugar into TM bowl and grind for 30 sec on speed 9. Add the frozen fuit, lemon juice and blend until creamy.
Decorate the sorbet with the Honey Lace Cookies, a strawberry and the blueberries previously cooked for 2 mins with 1 Tbs of sugar and 1 Tbs of water.


Honey Lace Cookies by Martha Stewart


2 tablespoons unsalted butter
2 tablespoons light-brown sugar
1 1/2 tablespoons honey
2 tablespoons all-purpose flour
Pinch of salt


Preheat oven to 375 degrees. Line two large baking sheets with Silpats (French baking mats) or parchment paper. Set aside. In a small saucepan, melt butter, sugar, and honey. Transfer to a bowl. Whisk in flour and salt until smooth.
Working quickly, drop 1/2 teaspoons of batter onto prepared baking sheets, at least 3 inches apart. Bake until cookies spread and turn golden brown, about 6 minutes. Transfer sheet to a wire rack; let cool completely. With your fingers, carefully remove cookies from pan.
