Cream cheese and walnut cookies

Sto imparando a fare i biscotti, mi sto esercitando spesso ultimamente e i risultati sono positivi.
Prima di scegliere la ricetta ci metto un secolo, leggo di tutto e poi finisco sempre sul sito di Martha Stewart perchè così non rischio: lei è una garanzia, un guru nel magico mondo dei biscotti.
Le noci non mi piacciono molto e proprio per questo ho scelto la ricetta del post di oggi, volevo che Martha mi facesse cambiare idea e devo dire che, come al solito, mi ha convinto. C'è anche il formaggio cremoso tra gli ingredienti (ho usato quello light), il risultato è un biscotto burroso e delicato.
Mi piace troppo sfornare le mie teglie di biscotti :)) prendo la mia nuova paletta nera, li sollevo delicatamente uno alla volta e li allineo in ordine sul tavolo. Li guardo soddisfatta, ne prendo uno, soffio un pò e infine comincio con la (lunga) fase dell'assaggio!

Ingredienti x 24 biscotti:

250gr di farina
1 cucchiaino di sale
225gr burro
90gr di formaggio cremoso
1 cucchiaio di estratto di vaniglia
120gr di zucchero
120gr di noci di cui 70gr tostate e tagliate a pezzetti, 50gr tritate finemente

Mescolare la farina e il sale. Mettere nella planetaria il formaggio e il burro e montare per 2 minuti. Aggiungere lo zucchero e la vaniglia e continuare a mescolare diminuendo la velocità. Aggiungere la farina e mescolare brevemente. Incorporare 120gr di noci.
A questo punto ho diviso in due la pasta e l'ho messa su un foglio di carta da forno. Tenendola avvolta nella carta ho formato due cilindri di pasta di 5cm di diametro. Ho tolto la pasta delicatamente e ho passato i due cilindri su un tagliere dove avevo messo le noci tritate. Ho avvolto di nuovo la pasta nella carta e l'ho messa in congelatore per mezz'ora circa. Dopodichè ho tagliato i biscotti con un coltello e e li ho cotti a 160° per circa 20min fino a che hanno raggiunto un colore dorato lungo i bordi e come suggerisce la ricetta ho girato le teglie durante la cottura per cuocere i biscotti uniformemente. Ultima cosa: la versione americana è doppia, sul sito dell'autrice la troverete così.

I am learning to make cookies, I've been practising a lot lately and the results have been good.
It takes me ages before I decide which is my recipe, I read as many as I can then I always end up on Martha Stewart's website so I don't risk a failure, she is a guaranteed success, a guru in the magic world of cookies.
Before I didn't like walnuts very much however I chose this recipe hoping Martha would make me change my mind; I have to say she has convinced me, she's truly amazing! Among the ingredients there is also some cream cheese (I used the light one), the results is a delicate and buttery cookie, very good.
It's so much fun when I take my baking pans out of the oven. Normally I quickly grab my new black spatula, then I carefully remove them one at a time and I line them up on the table in perfect order. I look at my creation with satisfaction, I seize one cookie, cool it down (for only one second) and I begin the long preliminary step: the tasting!

Ingredients

Makes about 4 dozen


4 cups all-purpose flour
1 1/4 tsp coarse salt
2 cups unsalted butter, softened
6 ounces cream cheese
1 1/4 cups sugar
2 Tbs plus 1/2 tsp pure vanilla extract
2 1/2 cups walnut halves (1 1/2 cups toasted and coarsely chopped), 1 cup finely chopped


Whisk together flour and salt in a large bowl; set aside. Put butter and cream cheese in the bowl of an electric mixer fitted with the paddle attachment. Mix on medium speed until pale and fluffy, about 2 minutes. Mix in sugar and vanilla. Reduce speed to low. Add flour mixture, and mix until just combined (do not overmix). Mix in toasted walnut.
Transfer dough to a working surface. Divide in half; shape each half into an 8 1/2 inch long log about 2 inches in diameter. Wrap each log in parchment paper, freeze until firm, about 30 minutes or up to 2 weeks.
Preheat oven to 350 with racks in upper and lower thirds. Unwrap 1 log, and roll in 1/2 cup chopped walnuts, coating completely. Cut into 1/4-inch-thick rounds. Space 1 inch apart on baking sheets lined with parchment paper.
Bake cookies, rotating halfway through, untilgolden around edges, 18 to 20 minutes. let cool on sheets on wire racks. Repeat with remaining log and remaining 1/2 cup walnuts.
Cookies can be stored in airtight containers at room temperature ut to 3 days.

Vellutata di zucchine e piselli

Per difendermi dall'attacco dei carboidrati, di cui sono una vittima consapevole, preparo una vellutata come quella che vedete nella foto. Quando ho poco tempo come in questo periodo, mangio pane e pizza in grande quantità, un po' perché mi piacciono un po' perché sono pronti così quando arrivo a casa e sto per svenire dalla fame posso mangiare subito. Adoro le verdure e quando non posso prepararle con calma mi salvo con la vellutata; ci vogliono 30 minuti con il Bimby, se sostituisco i piselli con una verdura ce ne vogliono solo 15. Alla  vellutata ho aggiunto la feta a cubetti e le chips di rape rosse. Ho visto le chips per la prima volta quando sono tornata  a Londra a Novembre ed ho subito pensato che fossero un'idea geniale per una come me che ama sgranocchiare qualcosa tutto il giorno. Perché qui non si trovano?! Peccato! Poi mi sono ricordata del mio essiccatore ed ho risolto il problema. Infine ho usato il nuovo mix di spezie, origano e santoreggia, che ho comprato al bellissimo mercato del Circo Massimo. E ora si mangia!

Vellutata di zucchine e piselli
Ingredienti per 2: 
1/2 porro
olio d'oliva
2 zucchine, solo la parte verde
200gr piselli surgelati
origano 
santoreggia 
feta
1 rapa rossa cotta tagliata a fette sottili

Tritare il porro nel Bimby, aggiungere un po' d'olio e cuocere a 100 per 3 min. Unire le verdure, 200ml di acqua e il sale. Cuocere a 100 per 30 min e omogeneizzare. Servire la vellutata con le chips di rape rosse e i cubetti di feta.

To defend myself from the attack of carbohydrates, of which I am a conscious victim, I like to prepare a creamy soup like the one you  see in the photo. When I have little time I eat an abundance of bread and pizza, on one hand because I like them of course, on the other hand because they are ready to eat. In fact when I arrive home late and I am tired and hungry I can't wait a second, I myst grab something to keep me going. Actually I love vegetables and if I haven't got time to prepare them calmly I save myself with this recipe, it only takes me 30 mins with my Thermomix. To my soup I added some cubed feta cheese and some beetroot chips. I first saw these chips when I went to London in November and I immediately thought they were a brilliant and a healthy idea for somebody like me who always needs something to munch on. Why can't I find them in Italy? I thought.... Then suddenly I remembered I have my fruit dryer and as you can see I have solved the problem. I finished with the new mix of spices, oregan and savoury, I bought in the morning at the fantastic market of Circo Massimo. Enjoy!

Creamy zucchini and pea soup
Ingredients for 2:

1/2 leek
olive oil
2 zucchini, only the green part
200gr frozen peas
200ml water
1 cooked beetroot cut into thin slices
oregan
savoury
feta cheese

In the TM bowl chop the leek, add some olive oil and cook for 3 mins at 100 temp speed 1. Add the vegetables, salt and water. Cook for 30 mins at 100 degrees speed 1. Blend for 15-20 seconds by slowly going from speed 1-9.
