Crunchy Granola

Crunchy granola



La prima volta che ho visto una quantità e una varietà infinita di granola ero da Whole Foods, a Chicago. Lì la granola, che noi chiamiamo in genere muesli croccante, si vendeva a peso tanti anni fa. Quindi ho assaggiato quasi tutti i gusti, sperando di ritrovarla in futuro anche qui. Però l'idea era quella di prepararla a casa e dopo tanti anni ho finalmente fatto il mio esperimento.
Lo scorso anno ho comprato l'essiccatore e quest'estate l'ho usato per preparare le pesche, l'ananas e le ciliegie. I colori della frutta non sono così brillanti come in quella che si compra, ma il sapore è ottimo. L'ananas mi è piaciuta molto. Insomma, la ricetta è riuscita, una parte come al solito è finita durante le foto, il resto va per domani mattina a colazione, non vedo l'ora!


Granola frutta secca


Ingredienti:
2 tazze di fiocchi d'avena piccoli
1/2 tazza di farro soffiato
2 cucchiai di zucchero di canna
1/4 di sale
1/2 tazza di malto di riso
3 cucchiai di margarina light
2 o 3 cucchiai di acqua
1/2 cucchiaino di cannella
1 tazza di frutta secca (ciliegie, pesche, ananas)

In una ciotola, mescolare i primi quattro ingredienti. Mettere in un pentolino l' acqua, la margarina e il malto e far cuocere a fuoco medio fino a che inizi a bollire. Versare sui cereali e mescolare bene. Aggiungere la cannella e la frutta secca e versare il composto in una teglia rivestita di carta da forno. Cuocere a 175° per 20 minuti.

The first time I saw an amazing variety of granola I was at the Whole Foods Market in Chicago. There I tasted a tropical fruit granola that I liked a lot.
Last year I bought a fruit dryer that I used to dry my choice of summer fruit and then made my first fruit granola. The colours of the fruit were not as vivid and brilliant as in the ready made version you can buy, but the flavour of my dried fruit is really good. I particularly liked the pineapple. So despite how the color turned out, I'm very proud of this recipe! :))

Ingredients:

2 cups oats
1/2 cup organic puffed spelt
2 Tbs brown sugar
1/4 tsp salt
1/2 cup rice malt
3 Tbs light margarine
2 or 3 Tbs water
1/2 tsp cinnamon
1 cup mixed dried fruit (cherries, pineapple, peaches)


In a bowl, mix the first four ingredients together. In a small pan stir together water, rice malt and margarine. Bring to a boil over medium heat then pour over the dry ingredients and stir to coat. Add cinnamon and dried fruit. Spread the mixture into a baking dish lined with parchment paper. Bake at 175° for 20 mins.

Insalata di farro

Luglio 2010 Sono appena tornata dal mare, il caldo è insopportabile e in altre circostanze cucinare sarebbe l'ultimo dei miei pensieri. Tuttavia ho un blog da mandare avanti :)) così ho raccolto tutte le mie forze e ho preparato il farro. Sono contenta di aver sfidato il caldo e come ho già detto altre volte, se non fosse per il blog alla fine mangerei sempre le stesse cose, questo è il modo migliore per vincere la pigrizia e per variare i menù di tutti i giorni.
A proposito, vi piace il pesto? Qui, a casa va tantissimo. Io e Gianni ne abbiamo preparato in grande quantità e una parte l'abbiamo congelata.
Per cambiare un pò ho usato le mandorle e le nocciole invece dei pinoli. Il risultato è stato ottimo, ma la prossima volta abbiamo deciso di aumentare la quantità di nocciole perchè il sapore era veramente buono e se si sentisse di più sarebbe ancora meglio.

Ingredienti per 2 persone che mangiano molto!
250gr di farro
1 tazza di piselli freschi/surgelati
1 tazza di fave fresche/surgelate
pesto
pomodori datterini

Far bollire l'acqua e versare il farro e i piselli. Durante gli ultimi 10 minuti di cottura, aggiungere le fave. Il tempo di cottura totale è di 35/40 minuti. Scolare e condire con il pesto. Aggiungere i pomodorini.


July 2010 I've just come back from the sea. It's terribly hot and cooking would be, in other circumstances, the least of my worries. Yet, I have a blog to keep going so I have gathered all my strength and made this dish. I know I am repeating myself, but I must say that once again, after I finished preparing this farro salad, I thought to myself that if it were not for my blog, I wouldn't have this variety in my meals.


Anyway, do you like pesto? Here at home we love it. In fact, Gianni and I made such a large quantity that  there was some left to be frozen!
As a variation we put almonds and hazelnuts instead of pine nuts. Though we both enjoyed this dish, we  concluded that a stronger hazelnut flavor could make the difference so next time we will use only hazelnuts and no almonds.

Ingredients for 4:
250gr farro
1 cup broad bean
1 cup peas
Cherry tomatoes
pesto
In a pan of cold water, put farro and bring it to boiling. Once the water starts boiling add the peas and set the time for 25/35 mins. Reduce the heat to a simmer and in the last 10 mins add the broad bean and finish cooking. Drain and rinse quickly under cold water. Season with salt and the desired amount of pesto. My pesto is dense so if you follow my recipe you may need to melt it with some water. Last thing, I like this salad to be warm, so when I take it out of the fridge I put it in the microwave for one minute and it's ready.
