Biscotti glassati

biscotti_glassati1

E' andato tutto bene, troppo bene....

For Liverpuddlians and English speaking people everywhere …

Everything went well, too well....
We came back from Paris on 12th December, after 4 days, spent in the company of my dearest friends, all of them Beatles Fans of course, with whom I shared 2 hours and 50 minutes of magic.
At 6pm of 10th December we took the Underground and reached the Bercy Stadium to see the concert of Paul McCartney.

As soon as we were in, according to "plan", we queued to buy a T-shirt, a scarf and all that's "needed".

The concert began around 9pm and was simply beautiful, amazing...we wished it would never end...since that day we can't stop talking about it as if to go back in time and live those moments again...we had so much fun, we laughed, we cried, we sang along with every song...
With Pat and Manu, we always do our best to be noticed by Paul and even this time we reached our goal: he liked the big poster that Manu draw, with a big red heart on it and at the end of And I love her, when he finally saw us, he wawed to us and touched his heart three times, maybe because there were three of us? :-D
All this, while my mother listening to the song by my cell phone from Rome, so she could hear us screaming with joy!
Something special to remember: "Mrs Vanderbilt" and "Ob-la-di, Ob-la-da" which we listened live for the first time, amusing and enthralling the first one, unforgettable the second.
At the end of the concert, after 2 encores, (he is very generous with his fans):)) Paul went away under a white and silver confetti rain and of course we gathered some and kept them for good.

Paris is just wonderful, the perfect frame for our adventure, heaven to food lovers and foodbloggers, the ideal place for those who have a passion for history and art.
Thank you Floriana for taking part in the emotion I felt when I saw the Nike. It was nice to share that moment with someone who has such a profound knowledge of the history of art. Even if you were distant phisically I'm sure that for a moment , with your mind, you saw the Nike with me. How I wish I could have heard your words about what we saw at the Louvre Museum! A proper lesson in art, what do you think?

I biscotti

biscotti_glassati2

As for the recipe of today, this is the Fleur de Sel that I bought just to make biscuits.

fleur_de_sel

Sugar cookies

They are not exactly like the Ladurée biscuits (I love their Sablés!) but even with my strong sense of self-criticis I can say that I liked them. I made them even without icing or with just flour and cornflour, 170gr flour and 70gr cornflour. The dough was not smooth and it was moist, however I avoided adding more flour, I put it in the fridge for 2 hours. At that point it was drier, therefore, with the help of a Silpat baking sheet, it was easy to roll it out.

Ingredients:
200gr flour
30gr coconut
20gr powdered almond
100gr butter
100gr sugar
2 tsp baking powder
1 egg
1/2 tsp Fleur de Sel

In a non stick pan, toast the almonds until golden. Put the coconut in a coffee grinder and process until the flakes are powdered; nut oil will be released by grinding so coconut will be creamy. This will help the kneading and the edges of biscuits to be smooth. Sift flour and baking powder, add coconut, almond and salt. Work the flour with butter, add the egg and sugar. Knead together all the ingredients to form a ball, wrap it with cling film and refrigerate for at least 2 hours. Roll out the dough, about 1/2 cm thick and cut out the biscuits using a 5 cm star-shaped cutter. Cook at 160 for 12 mins, turn the baking tray for even cooking.

Icing
200gr powdered sugar
water or lemon juice

I mixed sugar with some Tbs of water and lemon juice, then I stirred until smooth and rather thick. I didn't follow a precise recipe but just add more liquid when necessary. As I said I like the mixture to be thick because it doesn't drip off.
When the biscuits are cold, use a teaspoon to spread the icing and a knife along the edges. Cool on a rack.

Brioches con crema e lamponi

brioches_con_crema_e_lamponi

Un quotidiano, il giorno dopo, ha definito quella notte The long and winding queue!

For Liverpuddlians and English speaking people everywhere …

Something sweet to remember a special day, 22nd Nov 2006: the day I met Paul.
This is me, camping out in Piccadilly. A newspaper, the following day, called that night out The long and winding queue!
My "knight in shining armour" ran away from me, maybe because by the time I met him I didn't look exactly like a princess....:-D

22_nov_2006me

Lasciare raffreddare.

For Liverpuddlians and English speaking people everywhere …

I like sweets, I like them too much so I have to make a big effort to limit the quantity I eat. When I want to make a cake I usually start by choosing something very caloric but then I regret it immediately! I just can't find the courage to weigh a big piece of butter or chocolate milk, which I adore. So I take the scale and begin: the first little piece, then I add some more and hesitate...., yes, I'll add another piece and stop, happy with a 15% "discount" on the amount of total fat. It's a negotiation with my scale, we must get to an agreement. These mini-cakes, which contain only 60 gr of butter, pass my exam with an A+, without the need of a revision. Anyway I'm tired of this constant worrying about the fat content, in fact my New Year's resolution is to prepare something very rich and very good for my blog and for me, I think I deserve it. Hoping I don't regain the 3 pounds I've just lost with.... Song of the day: Penny Lane

Ingredients for about 12 mini-cakes

25 gr fresh yeast
1 tsp sugar
50 ml milk
550 gr flour
2 eggs
60 gr margarine, melted
120 gr sugar
100 ml warm water
1 Tbs salt
Melt yeast and 1 tsp sugar in warm milk. In a small bowl mix eggs and margarine. In a larger bowl, mix flour and the rest of the ingredients and begin to knead slowly, incorporating salt at the end of the procedure. Cover with cling film and let rise until it doubles in size. Move the dough to a floured surface and roll into a large rectangle. Using a floured 2-inch (5 cm) cookie cutter, cut the dough into circles. Place the cakes on a baking sheet, lined with parchment paper, let rise again for 30 mins. Press centers with your thumb and fill with 1 tsp of cream custard. Bake at 180° for 25/30 mins. Dust with powdered sugar and decorate with raspberries.

Cream custard
2 egg yolks
2 1/2 Tbs sugar
2 Tbs flour
1 1/2 cup milk
In a saucepan, combine eggs and sugar and wisk until the mixture turns into a pale yellow colour. Add flour and blend. Gradually beat in the milk. Cook over very low heat, stirring constantly until mixture thickens. Let cool.

Servire con i panini all'aneto e patate.

Panini all'aneto e patate
La ricetta si trova nel libro: "Muffins and quick breads" by Linda Fraser. Creative cooking library.

Ingredienti per 10 panini
225 gr farina autolievitante (Ho usato mezza bustina di lievito)
3 cucchiai di burro morbido
un pizzico di sale
1 cucchiaio di aneto fresco (Ho usato 1 cucchiaino di quello secco)
170 gr patate bollite e schiacciate

Asparagus with tahini sauce and pumpkin cream

My friend Cristina gave me a big pumpkin, a big beautiful pumpkin, brought by a farmer to Fabrizio, a young doctor, who is Cristina's husband and a friend as well. A pumpkin brought as a gift by a farmer, has a special meaning for those, who like me, live in a city and don't have a garden to grow things in. So the fact becomes the subject of a conversation; you would talk with your female friends and tell them the news: "A friend gave me a pumpkin!". And of course you would describe the journey that the pumpkin has made before arriving to your house, stressing the idea that the vegetable in question is absolutely genuine! The friends who are listening to you, normally join in the conversation with enthusiasm, so, in the blink of an eye you find yourself with a considerable number of recipes in which your pumpkin has a major role. I used it to accompany asparagus with tahini sauce, I added some black pepper and it was perfect. Thank you Cris!

Song of the day: Jenny Wren

Asparagus with tahini sauce, pumpkin cream and dill and potato cakes

garlic
black pepper
Boil the asparagus for 10 mins and drain. In a pan, cook pumpkin with olive oil and garlic until soft. Put in a food processor and blend until creamy. In a small bowl, prepare the sauce by mixing tahini, lemon juice, water and salt. In a serving dish, put the pumpkin cream using a serving circle. Decorate with sage. Arrange the asparagus and toss with the tahini sauce. Serve with dill and potato cakes.

Dill and potato cakes
This recipe is taken from "Muffins and quick breads" by Linda Fraser. Creative cooking library.

Ingredients for 10 cakes
225gr self-raising flour
3 Tbs butter, softned
pinch of salt
1 Tbs finely chopped fresh dill (I substituted 1 tsp dried)
170 gr mashed potato, freshly made
2-3 Tbs milk, as required
Preheat oven to 230° (I turned it down to 180°)
Sift the flour into a bowl, and add the butter, salt and dill. Mix in the mashed potato and enough milk to make a soft, pliable dough. Roll out the dough on a well floured surface until it is fairly thin. Cut into neat rounds using a 3 inch (I made smaller cakes) cutter. Grease a baking sheet, place the cakes on it, and bake for 20-25 minutes until they rise and are gold.

Giochiamo a carte?

quiche_alle_carote_1

Pepper. It's "Getting better" all the time..........

quiche_alle_carote_2

Metterli in un piatto e poi nello stesso tegame, versare 3 cucchiai d'olio e cuocervi i porri tagliati sottili, mescolando spesso.

It's time to go to Paris again. I miss it and to recreate the magic athmosphere of the city, where I think I can feel nothing but well, I decided to make this mini-quiches.
In Paris, a couple of years ago, we went to Paul's for lunch, the place is between rue de Seine and rue de Buci. We were strolling around Saint-Germain-de-Près when the big sign "Paul" appeared to me: I couldn't resist. The restaurant was so nice and the food really good, so the following day we went there again. With a name like Paul who could be surprised?! :))
Once satisfied with our lunch, we went out and just opposite of us was a shop where I bought a nice coat, a bag, a sweater and a necklace, so even the problem of Parisian shopping, unavoidble for us women, was solved. What more could I ask for?

Carrot quiches

Ingredients for 8 mini quiches or for a 26 cm diam pan
For the pastry:
I slightly modified the recipe contained in the basic book of Thermomix
250gr flour
70gr margarine (instead of 100gr)
a pinch of salt
70gr water to which I added a couple of Tbs while the machine was working
Knead 20 sec./speed 4

Filling:
100gr frozen peas
100ml water
olive oil
2 leeks, thinly sliced
500gr carrots, cut into julienne strips
125 yogurt
100ml whipping cream
2 eggs

In a pan, cook peas with water for 20 mins. Set aside. In the same pan cook leeks with some olive oil, stirring frequently. Once cooked, add carrots and cook over high heat for 15 mins. Let cool and then put in a bowl. In a smaller bowl, mix yogurt, cream and eggs. Pour over vegetables and mix well. Roll the dough as thinly as possible and place in the tins. Trim off the excess dough, by rolling your rolling pin over the top of the tins. Pour the filling into the tins and bake at 180 for 10 mins, then cover with aluminium foil and continue baking another 20 mins.

Tortino di patate

tortino_di_patate

Mi tocca cantare da sola (e sarebbe meglio evitare!) senza l'originale "Be-bop-a-lula" e "I Lost My Little Girl"

For Liverpuddlians and English speaking people everywhere.....

Preparing the dish only for the two of us is a risk. We end up, one piece after another, eating too much. Just to avoid this, I divided it into cubes, so it falls into the category of finger food which everybody seems to like so much.
On the day I made it however, I was alone so you can imagine what I did: my camera was slippery because while I took the pictures I ate.
I think that this dish is irresistible and if you live in an apartment like me it may have occurred, thousands of time, that you came back home and followed, in the building, the delicious smell of potato cake. You may also have wondered who was the "guilty party", hoping that somebody might appear at your door offering some. This time it was my turn, I made the cake, but none was left in my house nor in the building...!

Songs of the day: I lost the Unplugged Album. I have no choice but to sing by myself (which I should avoid doing;) without the original in the background. "Be-bop-a-lula" and "I lost my little girl".

Ingredients for 4:
1kg potatoes
2 eggs
6 sun-dried tomatoes cut into pieces
100gr scamorza
200gr mozzarella
30gr parmesan cheese
grated bread
30 gr margarine
nutmeg and chives

Boil and mash the potatoes, mix in margarine and let cool. Add the rest of the ingredients except for scamorza and mozzarella. Butter a 20x30 cm cake pan and sprinkle with grated bread. Evenly spread half the potato mixture into the pan. Arrange the cheese, cut into pieces, on top and cover with remaining potato mixture. Bake at 180 for 30/40 mins.

Ravioli alle rape rosse

ravioli_alle_rape_rosse_1650

Questi ravioli li ho assaggiati tanto tempo fà a Cortina, li chiamano Casunziei in quella zona.
Canzoni del giorno: Footprints e Only love remains.

For Liverpuddlians and English speaking people everywhere.....

Ingredients for 40 ravioli

I had this ravioli a long time ago during a holiday at the famous mountain resort of Cortina d'Ampezzo in the Dolomites. In Cortina they call them Casunziei. There are many different versions of this recipe, but an old lady once told me that for the filling she only used red turnips and toasted flour. This is how I decided to prepare them. It's been my first experiment with Pasta all'uovo and luckily it ended up well, I enjoyed myself and made everything in less time then I thought.
Ingredients for 40 ravioli: 150 gr manitoba flour 150 gr durum wheat flour 3 eggs 1 Tbsp olive oil salt
To prepare the dough I used my Thermomix and I had to add a little water. I think you will need the water even if you knead by hand or in a food processor. When the dough is ready, let stand for 30 mins.
For the filling: 300 gr red boiled turnips 60 gr flour salt 1 egg yolk
In a food processor, blend the turnips until creamy. In a skillet, toast the flour for a few minutes until it turns a creamy colour. Add salt, egg and mix well. Using a pasta machine, roll the dough to obtain a sheet of thin pasta. Place about 1 tsp of filling at 5 cm intervals along the border of sheet. Fold the dough lenghtwise over the row of fillings. Press around each filling to seal the pasta. Cut with a round ravioli stamp. Boil the ravioli for about 12 mins or until you taste the border where the pasta is doubled and see that it's ready. Season with margarine, sage, parmesan cheese and poppy seeds.

Paul: For no one
John: Stand by me

For Liverpuddlians and English speaking people everywhere.....

Being a Beatles fan asks for commitment and concentration. All of my friends are well aware of this: I think of Marco, Simone, Giuggi, the Jellyfish Pat and Manu and last but not least Maria who is an authority on the 4 solo careers. For example, I bought the remastered Albums but I didn't go any further than Past Masters. I'm dying to listen to Abbey Road, but I can't find the right moment. Such things must be done with calm, the first listening is a ritual, so for now, being too busy, I read the comments of the people who "worked" on the subject.
Anyway it's nice to think that I have so much to listen to for the first time:)))
I found this simple recipe in an old magazine, frying was a mystery for me until recently. Then I convinced my mother, who hates cooking but is very good at frying, to help me. So, while preparing the dish we seized the opportunity to listen to her idol who is also mine: John.

Ingredients for 4 people: 2 eggplants 3 eggs 150 gr grated bread 50 gr ground walnuts or hazelnuts chives basil semi-soft sheep cheese oil for frying salt
Cut the eggplants lengthwise into 1/2-inch slices. Mix the nuts into the grated bread. Pass the eggplants in the beated eggs, then coat them with bread just before frying. Prepare the involtini putting a basil leaf and a piece of cheese on each slice. Roll the eggplants and tie with chives.

Greek Trifle

She's a woman, Slow Down, Matchbox.

Canzone del giorno: I'm down. How can you laugh when you know I'm down......

Ingredienti x 6:

For Liverpuddlians and English speaking people everywhere.....

My friend Carole Anne, who lives in London (Lucky her to be so close to that beautiful guy that I like so much and of whom you see a picture on your right), often sends me newspaper clippings containing interesting articles about him. Lately, I received an open envelope with a greeting card from Carole Anne which was supposed to accompany a long article on Paul. Unfortunately somebody took it in my place. To my friend, who is not a big fan like me and thinks I'm exagerating :-D, I pointed out that, as a matter of fact, Paul is still very loved, considering that there are people out there who took an article with his photos!!
All jokes aside, I started to listen to the remastered Albums. I chose Past Masters because I had never bought those cds before so I rediscovered old hits like "She's a woman", "Slow Down" and "Matchbox". I'm very happy with my purchase!
As for the recipe, thanks again to Carole Anne because not only does she send me photos of Paul but also many recipes, taken from magazines, like this: after taking the photo of the dish, I ate it up while walking in the house and singing "I'm down".

Ingredients for 6 people: 100gr amaretti 2 Tbsp brandy 8 figs 6 dried apricots ( I used fresh peaches) apricot jam greek yogurt honey slivered almonds
Grind the amaretti biscuits in a blender and add the brandy. Cut the fruit into thin slices. In a dish, form a layer of biscuits, a second layer of fruit then add the jam. Spoon over some yogurt, then top it with honey and slivered almonds.

Riso ai fiori di zucca e rucola

riso_ai_fiori_di_zucca_e_rucola_2

Album del giorno: Beatles for Sale, tutto.

For Liverpuddlians and English speaking people everywhere.....

There is a surreal silence on this Mid August Holiday, when everybody is away I'm home and as a "tradition" I break this silence at 10am with the Beatles music at full volume.
During these days, every year, I can finally listen to anything I like without the worry of disturbing the neighbourhood. It's a great feeling of freedom because, even though many people know about my passion, I still prefer to keep it private and like to live the listening experience in a more intimate way. This is when it is only me and their voices: no external intrusion. Once a year it's allowed.
The dish of the day is a summer risotto that has a delicate taste. It was on my Wedding Menu and is therefore a "good memory" of a very hectic day!

Song of the day: Kansas City

Ingredients for 4 people: 10 zucchini flowers a handful of arugula1 clove garlicolive oil parmesan cheese vegetable broth or water margarine
Clean the zucchini flowers removing the stem and the pistils, being careful to leave the fleshy part at each base intact, the chef told me (yes, even on that day I worried to asked for the recipe!) that it gives it all the flavour.
Heat oil and garlic in a deep pan, add the flowers and arugula and cook until tender. Put in the rice and toast it for a minute, stirring constantly. Pour enough broth over the rice to cover it and stir only once. The chef also told me that I shouldn't stir all the time. Ever since, whenever I cook rice, this is what I do, I keep it on low heat so it won't stick to the pan. When ready, I turn off the heat, I add a knob of margarine and parmesan cheese and stir one last time. I leave the rice to stand for a minute before serving.

Happy Birthday Paul!

happy_birthday_paul

Auguri Paul!

For Liverpuddlians and English speaking people everywhere.....

Today it's Paul's Birthday, and this is the cake I made on my birthday which was in April.
This way we have something to share at least, a concert would suit me better but at the moment that possibility is "off limits". How will he spend his birthday? The first thing that jumps to my mind is that he will certainly get more phone calls than I would, will he feel inclined to turn off his mobile?
But of course he will even get more presents than me.
Back to the cake, this is a traditional Italian cake that gets its name from the flower: mimosa. Its base is similar to a sponge cake from which I cut out the middle leaving a border around. I poured the syrup from a can of pineapple over it to make it moist. I cut the pineapple into pieces and filled the middle of the cake with them. I spread the cream over the pineapple to make it even and then I topped that with whipped cream. To garnish the cake I used the sponge cake previously removed from the center, I put it in a blender and reduce it to small yellow pieces. Finally, I sprinkled them over the cake giving it a yellow colour meant to call to mind the flower, famous also for inspiring it.
Do you like it Paul?? :)))

Pan di Spagna

Ingredients for 10 people: 4 eggs 260 gr flour 260 gr sugar 50 gr water 1 sachet baking powder a pinch of salt Cooking time: 30/40 mins at 160°

Cream custard
500 gr milk5 egg yolks 1 sachet vanilla powder 50 gr potato flower 100gr sugar

250 ml whipped cream canned pineapple

The recipe is from the basic recipe book of Thermomix. If you haven't got the machine you can use a blender or a hand mixer, but remember to weigh all the ingredients, even the liquid ones.
In a mixing bowl, beat eggs, vanilla and sugar until creamy. Add the remainig ingredients and mix well. Butter and flour a 20x30 cm cake pan. Pour the butter in the pan and bake at 160° for 30/40 mins.
Cream custard: in a small pan, mix eggs, sugar and flour. Add milk and vanilla, cook on low heat until the cream thickens.
Note: my cream was too liquidy so I doubled the flour quantity
To prepare the cake, follow the instructions above, if you need any more information please email me.

Pasta al farro con verdure

pasta_fredda_al_farro_con_verdure

For Liverpuddlians and English speaking people everywhere.....

I feel neglected and angry today. Things that happen while you are dealing with men, is it maybe because they are all the same? Probably yes, even when they speak in a different language in the end they all act like each other. They only care about their own life and neglect the rest. In Paul's case "the rest" would be me, allow me to explain: it happens that, after a long period of absence from the media, my dear Paul reappeared in Los Angeles to present a new videogame: The Beatles: Rock Band. Los Angeles couldn't be farther and that's not all, the biggest problem would be going to the concerts. On 18th July he is going back on stage in New York, what about Europe? I'm not saying Italy because that would be too much to ask, but in Europe you could certainly find a nice place to play, in other words, how long do we have to wait? Who, among my friends from OffTheWeb is going? Ther's no time to cool off, 18th July is just around the corner.

This pasta is inspired by Heidi's Orzo Super Salad (101cookbooks)

Ingredients for 2 people: farro pasta olive oil 150 gr frozen peas 2 shallots a small bunch of asparagus 150 gr oven-cooked ricotta a handful of agretti a half lemon
Slice the shallots thinly and place in a pan with some oil, cook until soft but not brown. Add the peas and a glass of water, continue to cook on low heat for about half an hour. Bring to boiling a pan of salted water then add the agretti and the pasta and cook for 7 mins. During the last 4 mins, add the aparagus, cut in little pieces. Drain the pasta and put under cold water. In a bowl mix the pasta with peas, lemon juice, grated zest and crumbled ricotta.

Cous cous con funghi e melanzane

cous_cous_con_funghi_e_melanzane

For Liverpuddlians and English speaking people everywhere.....

After 3 days in Tuscany I've come back. In Tuscany I can have everything I need so I spend there most of my holidays, the rest in Alto Adige.
In Tuscany there are baths, which I love, nature, the magnificent hills around Siena, an uncomparable culinary tradition and Florence.
My first memory of Florence, where I went to celebrate the complition of my first exam in Italian Literature at University, is in the Basilica of Santa Maria Novella. There, the great poet Giovanni Boccaccio imagined that, in 1348, 3 young girls and 7 boys first met in his superb masterpiece. That day was the beginning of a run around museums and old palaces which ended with the exibition of Aqueforti by Rembrandt, I couldn't have asked for more.
But Florence is also a tight tangle of streets full of shops, where shopping works wonders, better without husbands and with the company af a female friend. Even this time everything went well, I came home loaded with lovely thing to wear, to eat and to admire. Finally, there is something else to say about Florence: in that wonderful town there is one of the biggest fans of Paul Mccartney, one of my closest friends, Patrizia. Pat, Emanuela and I always move around together, we are companions of Signing Sessions and concerts, as a result our friends have called us the 3 Jellyfish.
As if this is not enough, Pat's husband and friends are Beatles fans and all equipped with guitars, like my husband after all. Wherever Pat is, ther is always music and food of top quality because Pat is also a good cook. Pat, isn't it time to start a food blog?
Song of the day: Things We Said Today because I was able to get her to sing the whole song, with me and the guitar players, from beginning to end!

Ingredients: 300 gr cous cous 350 ml boiled salted water olive oil 2 eggplant cut into cubes 1 clove garlic 500 g sliced mushrooms saffron curry powder 1 onion 3 Tbs raisins 200 gr cherry tomatoes basil chives For the salsa: 125 ml yogurt a half avocado

In a bowl put the cous cous and pour over it the boiling salted water, 1 Tbs olive oil, curry powder, saffron and cover for 15 mins. In a frying pan, cook the sliced onion with 3 Tbs olive oil, then add the eggplant, salt and cook stirring constantly so that all the parts are cooked evenly. Set aside. In another pan heat 1 clove garlic with 2 Tbs of oil, add the mushrooms, salt and cook until tender and the water has evaporated. Mix the coous cous with the vegetables, add the tomatoes, cut in halves, basil and chives. As for the sauce, it's optional: I mixed the yogurt with the half avocado cut into tiny pieces. Serve at room temperature.

"Pa-pa-pa-pa-pa-pa-pa-pa-pa-pa-pa-pa-pa-pa-pa-pa-pa-pa-pa-pa (li ho contati, dovrebbero essere 17 pa)...see how they run............" E' un problema, perchè quando comincio non riesco più a fermarmi..."Lady Madonna lying on the bed, listen to the music playing in your head....." e poi continuo...tutto il giorno!

Song of the day: Lady Madonna

"Pa-pa-pa-pa-pa-pa-pa-pa-pa-pa-pa-pa-pa-pa-pa-pa-pa-pa-pa-pa (I counted them all, they should be 17)...see how they run........." It's a problem because when I start I can never stop..."Lady Madonna lying on the bed, listen to the music playing in your head...." And I keep singing on and on: "pa-pa-pa-pa-pa..."This song helps you keep up the rythm when you are running out of energy and slowing down. Try to sing the song to yourself , you never know, it may work:)) Lady Madonna is a good way to start my day, singing the Beatles is a gift, being a fan has been my luck!

Torta di rose

torta_di_rose

Canzone del giorno: I'm looking through you.

For Liverpuddlians and English speaking people everywhere.....

This is the first photograph I've taken of a dish prepared with the Thermomix. I did a lot of thinking before buying it but in the end I decided to give my cooking a new twist since it had become a little monotonous. Now I make creamy soups, fruit sorbet and risotto in few minutes and without the pain of always having to stir or standing by the cooker to make sure that I'm not burnig anything, something I'm very good at doing!
I had been meaning to make this cake for a while and now that I finally have, I must say that the finished product has exceeded my expectations, it's delicious!
My husband and I sat at the kitchen table with the cake in front of us and after a bit of hesitation to ruin my work of art, I tore off a rose andd absolutely devoured it! Needless to say that rose easily turned into two...
The recipe is in the basic book and is worth a try even if you don't have Thermomix.

Song of the day: I'm looking through you. So many years have gone by since he wrote that song...I'm very nostalgic and melancholy today...

Place sugar and lemon zest into TM bowl and mill for 15 sec on speed... Add milk, oil, yeast, egg yolks and mix 10 sec on speed 7. Add flour and salt and knead on interval setting (the wheat symbol) for 1 min.
For the filling: beat butter and sugar for 1 min on speed 3. I used about 70 gr margarine and just mix the 2 ingredients using a fork.
In the event you don't have the machine feel free to email me and I'll give tou some pointers....
Put the dough in a mixing bowl and cover it with a wet cloth. Leave in a warm spot or in the oven for 1 hour at 35°. Transfer the dough onto a floured surface and roll it into a rectangular shape and spread with butter and sugar. Starting at long side, roll up the dough. Slice into 5 cm slice and pinch each seam to seal. Place each rose in a baking pan and let rise until doubled. Cook at 160° for 30 mins.

Panini alle mele e pere

pane_dolce_con_mele_e_pere

panini_alle_mele_e_pere

For Liverpuddlians and English speaking people everywhere.....

I love this small rolls, on Sunday whenever I have time I make a big supply so there is always one available for breakfast during the week. I'll have them tomorrow morning with some honey or jam and of course with my beloved cappuccino.
Song of the day: today I cooked and couldn't find time to listen to any Paul's song but looking at this rolls country comes to my mind, I don't know why...So the song of the day is Heart Of The country from the beautiful album Ram

Ingredients for about 30 rolls: 500 gr manitoba flour 320 ml warm water 20 gr yeast 1 tsp honey 1 teaspoon salt 40 gr margarine ( sometimes I omit margarine and they still taste good) 40 gr brown sugar 50 gr raisins soaked in hot water 1/2 tsp star anise 1 Tbs cinnamon poppy seeds 1 apple and 1 pear cut into cubes

Crumble the yeast into a bowl. Mix in the warm water and honey and stir to dissolve the yeast. In a larger bowl put flour and salt then pour in the yeast mixture and begin to work the dough, add margarine and sugar and knead for a few minutes. Move the dough to a floured surface, stir in the fruit and knead until evenly distributed. Place the dough in a bowl and cover with a damp towel. Let rise in oven at 35° until double. line a large baking pan with parchment paper. Use one tablespoon to scoop the dough and form into balls. Place on the baking pan and let rise again for 30 mins. Bake at 250° for 5 nins. Reduce temperature to 180° and continue cooking for further 15/20 mins.

Insalata di riso Venere

insalata_di_riso_nero

Aveva solo 22 anni!!!!! Cosa facevamo noi a 22 anni???

Venere rice salad

I really can't make the traditional Italian rice salad, I tried to a long time ago but it was tasteless. Maybe because I can never understand the appeal of pickled vegetables and rice together or maybe because I don't like pickled period. So in my rice salad I put different ingredients, the ones you wouldn't normally find in an Italian salad. I once prepared it for my Macca friends and it was gone within seconds, I think it's a good sign!

Reflexions on the song of the day: Pat and I made up a scene: one day Paul woke up, maybe had a cup of tea and then thought: "I'm going to write a new song now!" and, without any hesitation, he wrote And I love Her, a simply perfect song. He was only 22!!! So we thought...what were we able to do when we were 22?? Nothing...no, maybe not...maybe we were sitting on a sofa, listening to And I Love Her, benefitting from Someone else's effort!!!!

Ingredients for 4: 300 gr rice 1 sweet potato, boiled and cut into cubes 1 chopped red pepper 150 gr Feta cheese olive oil garlic oregano 1 avocado 1 cup black pitted olives (optional)

Boil rice for 35 mins then place in a strainer and rince under running cold water. In a frying pan heat oil and garlic. Add the pepper, salt and cook until tender. Let cool. Add the rice, more salt if needed, oregano, olives and sprinkle with the crumbled Feta cheese. Transfer the salad to a large serving dish and garnish with the sliced avocado. Serve warm.

Veggie Parmentier

veggie_parmentier

As time goes by, it seems my food photography skills are getting worse.
The only excuse I have is that I've just started my blog and I can dedicate very little time to it, therefore I shoot my pictures occasionally, I post rarely and I lack in practice. Last week I spent 3 days taking pictures, I couldn't put my camera down but whenever I went to load up my memory card it was a disappointment.
However, after a moment of despair I regained my confidence and began to take a look around the web searching for food photography tips. Finally, I came across a fantastic post : a brilliant tutorial, very clear and easy to follow. I wish to thank Helen for sharing your knowledge with us, Leemei for hosting Helen, Staximo for the perfect translation and Comidademama who, through her very interesting blog, brought to Helen's post! Talking about food blogs, I wish to mention 2 of my favourite bloggers, Fiordizucca and 101cookboks: they are both creative cooks and talented photografer, their recipes are to die for and their pictures are just amazing!
Song of the day: With a little luck which reminds me of Linda McCartney, a wonderful person and a great photographer.

Ingredients for 3/4: 300gr carrots 300 gr potatoes 300 gr broccoli garlic olive oil 2 hard-boiled egg yolks 1/2 cup milk nutmeg 2 Tbs margarine 1/4 cup pitted black olives For the parmesan cheese sauce: 1/2 cup milk 1 tsp potato flour 2 tsp parmesan cheese

Cut broccoli into florets and boil them in salted water for 4 to 7 minutes. In a skillet, sautè in oil and garlic. Peel the potatoes and carrots, cut them into large chunks and boil them separately until tender. Make a purè. Season the carrots with salt, oil and add the olives roughly chopped. In a small pan melt the margariine, add the potatoes, salt, milk and nutmeg. Stir for 3 minutes. Using a serving circle arrange the 3 vegetables mixture in layers. You can serve at room temperature or warm, then place in oven at 160° for 15 minutes.

Ovis Molis

La canzone del giorno è Put it there

I adore cookies, I love the aroma of freshly-baked cookies wafting through the house. You may say, who doesn't?!
Unfortunately baking cookies was not a family tradition and to be honest I don't recall, in my childhood, my friends mother's making them. In Italy we usually have what is called "ciambellone" a plain cake served with vanilla powdered sugar. Very quick to make, there are thousands of versions and you could easily meet a mother claiming her recipe is a light one if not the best!
Well, I hope I started what might be a new tradition for me and my husband :))
Song of the day: Put it there I was thinking, just yesterday, of when Paul explained, in an interview, how he obtained that particular sound that you can hear in the background: he rubbed his hands over his jeans!! He is not lacking in ideas, isn't he? I'm sure my friend, Manu and Pat, have that scene impressed in their mind like me ;))

Ingredients:
200 gr white flour 100 gr potato flour 100 gr powdered sugar 170 gr margarine 5 hard-boiled egg yolks vanilla apricot jam
Mix together butter, sugar and vanilla. Add flour and sifted egg yolks. Form into a soft dough. Refrigerate 1 hour. Roll the dough into small balls and squeeze them a little, then press the center with with your thumb and place 1/2 teaspoon of jam into the depression. Place the cookies on a parchment lined baking pan. Bake in preheated oven at 180° for about 15 mins or until the cookies are firm but not brown.
