Crostata di more

Oggi in Toscana c'è una bella giornata di sole. Mentre scrivo sono seduta in giardino, accanto ad un albero di gelso e sono contenta di essere riuscita a rilassarmi un pò in questo rifugio tra i boschi dove spero di tornare presto...


La nostra estate è iniziata in Toscana, durante l'ultimo weekend di Giugno la mia amica Pat organizza una grande festa che è diventata un appuntamento fisso per tutti gli amici, che come noi, amano la musica.
Pat ha una casa in un paesino di montagna vicino Firenze, dove trascorre le sue vacanze quando è vuole un pò di relax.
Nella casa c'è l'immancabile Beatles corner e poi c'è una cucina immensa, la cucina che ogni food blogger vorrebbe avere!
A proposito della festa, i nostri ospiti ogni anno allestiscono un piccolo palco dove tutti i musicisti possono fare la loro esibizione. Quindi, la prima cosa che mettiamo in macchina prima di partire è la chitarra di Gianni.
Come ogni anno abbiamo prenotato un mini soggiorno nel nostro agriturismo preferito, l'Agricolle, che è il posto più tranquillo che io conosca.

La casa si trova in cima ad una collina, circondata dalle montagne che si osservano oltre gli alberi disposti lungo il viale che conduce all'ingresso della casa.

L'atmosfera accogliente è creata dalla Signora Mirella, che vive qui tutto l'anno con il marito Silvano e che dice con sicurezza di non sentire la mancanza della vita caotica di Firenze. Mi racconta che ama la compagnia delle sue piante, degli animali ma soprattutto non rinuncerebbe mai all'aria fresca e agli spazi aperti del luogo.
La mattina facciamo colazione molto presto e nel frattempo scambiamo due chiacchiere con lei che ci parla della vita di campagna. La tavola a colazione è sempre ricca, ci sono due o tre tipi di marmellate fatte in casa e c'è sempre una torta appena sfornata.
Quest'anno il tempo in primavera è stato brutto in Italia e quindi, ci diceva Mirella, il raccolto è stato un pò scarso, eppure non ci ha fatto mancare, come promesso, la deliziosa frittata con le zucchine del suo orto e le uova freschissime: è troppo buona!
Nel cortile ci sono delle bellissime piante di basilico che hanno foglie enormi e di colore verde brillante, le foglie di basilico sono perfette per preparare un liquore che Mirella offre volentieri ai suoi ospiti.

Di fronte alla porta d'ingresso c'è un albero di gelso e quest'anno era così carico di more che qui non sanno più cosa farne! Naturalmente mi sono offerta subito in aiuto! ;))
Prima della partenza il Signor Silvano è salito sull'albero ed ha riempito un cesto di more per me!

Ne ho congelata una piccola quantità e con 2 kg di frutti ho preparato un grosso barattolo di marmellata.

Ecco l'albero del gelso, ho sentito parlare tanto di quest'albero, fin da quando ero piccola ma per qualche strano motivo non lo avevo mai visto. 
Ho due ricordi legati all'albero del gelso, uno molto lontano, l'altro più recente.
Il primo è un episodio divertente e proprio ora ho finito di parlare al telefono con mio padre per farmi raccontare la storia per l'ennesima volta, una storia che mi raccontava sempre mia nonna e che ancora mi sembra incredibile perchè io sono estremamente pigra..
Mia nonna viveva in Veneto a Treviso e fin da giovane aveva imparato a filare la seta. Nella sua casa e poi anche in quella in cui è andata ad abitare quando ha sposato mio nonno, c'erano gli alberi del gelso che venivano piantati spesso nella zona lungo i filari di viti. Quegli alberi sono rimasti inutilizzati fino alla nascita del terzo figlio, mio padre. Il giorno dopo il lieto evento mio nonno ha pensato bene di portare un regalo a mia nonna; il regalo consisteva in un'oncia di bachi da seta!! A parte "l'originalità" del regalo l'aggravante consisteva nel fatto che i suddetti bachi, per formare il bozzolo, avevano bisogno di essere nutriti con le foglie di gelso per 40 giorni, ogni 2 ore!! Così la povera nonna, raccontava che si alzava ogni 2 ore, per dare da mangiare a mio padre e ai bachi. Ogni volta che ascoltavo la storia si finiva a ridere perchè alla fine, per provocarla, le chiedevo il motivo per il quale mio nonno non le avesse portato un anello di brillanti! A quel punto lei rideva ancora di più e giustificava il nonno dicendo che a quei tempi era già tanto se si aveva qualcosa da mangiare quindi i brillanti non erano nella lista dei desideri: era il 1939....

Il secondo ricordo legato al gelso è la storia di Piramo e Tisbe che ho studiato con la Prof di Filologia Romanza. 
Il racconto, narrato da Ovidio ha ispirato l'autore anonimo della novella cortese Piramo e Tisbe nel XII secolo.
Molti di voi la conosceranno, la scrivo per chi non ne ha mai sentito parlare e anche per me, mi piace rileggerla.

Piramo e Tisbe

I protagonisti, figli di due nobili babilonesi, si amano fin da bambini ma il loro sentimento viene contrastato dai genitori che proibiscono loro di incontrarsi.
La separazione non fa altro che accrescere la loro passione, fino a che Tisbe scopre una crepa nel muro che divide le due case e consente loro di comunicare e raccontarsi le reciproche sofferenze d'amore.
Un giorno i due ragazzi decidono di infrangere il divieto e si danno appuntamento presso un albero di gelso. Quella notte Tisbe arriva per prima nel luogo stabilito ma viene spaventata da un leone che ha il muso insanguinato per aver ucciso una preda.  A quel punto Tisbe fugge ma perde il velo che, calpestato dal leone, si macchia di sangue. Quando Piramo arriva sotto il gelso e vede il velo insanguinato, crede che Tisbe sia morta e  a quel punto si trafigge con un pugnale. Prima di morire Piramo prega gli dei affinchè conservino il ricordo del dolore e così i frutti del gelso, che fino ad allora erano bianchi, macchiati dal sangue di Piramo, diventano neri. 
Tisbe alla fine torna sul luogo dell'appuntamento, vedendo Piramo in fin di vita il suo dolore è talmente grande che decide di unirsi a lui nella morte. Prima di morire, Tisbe chiede che i loro corpi siano sepolti nella stessa urna. I due giovani innamorati ora riposano in pace e da allora la leggenda vuole che l'albero produca frutti neri in ricordo del loro amore.

Un saluto a Francesca e Marco, i miei giovanissimi amici e compagni di Università che, grazie alla loro ricetta e ai loro consigli mi hanno aiutato a preparare una buonissima crostata! Fino ad ora non ero mai riuscita ad ottenere grossi risultati, era sempre troppo cotta o troppo poco, l'idea di cuocere la base è stata risolutiva, la frolla è croccante e la cottura è uniforme, missione compiuta!

Ingredienti:
250gr farina
100gr zucchero a velo
150gr burro
2 tuorli
vaniglia
scorza di limone

Lavorare il burro morbido e aggiungere lo zucchero. Aggiungere i tuorli, gli aromi e infine la farina ed impastare velocemente.  Coprire la pasta con la pellicola e mettere in frigo per mezz'ora. Stendere una parte della frolla tra due fogli di carta da forno, ritagliare un disco di pasta e cuocerlo a 180° per circa 20 minuti. Togliere dal forno e versare la marmellata sulla sua superficie, coprire con le striscioline e sigillare il bordo con dei piccoli cerchi di pasta. Cuocere di nuovo per pochi minuti a 220°.

Today it's sunny in Tuscany and while I'm writing I' m sitting in a garden, next to a mulberry tree. I feel relaxed and thankful for these peaceful moments in this green refuge where I hope to come back soon...


Even this time I didn't miss the chance to spend the last weekend of June in Tuscany where my friend Pat throws a big party every year. The party has become an annual tradition for all the friends who love music like me.
Pat has a nice house in a small mountain village near Florence where she spends most of her time when she gets tired of the stress of city life. There is a Beatles corner in her living room of course and an amazing kitchen that every food blogger should have!!
Well, speaking about the party, our hosts always organize a small stage where all the musicians can do their exibitions. So the first thing we put in the car when we leave is my husband's guitar.
Like every year we reserved a room in our favourite country house, Agricolle.
This place is the most quiet one we know, a house at the top of a hill, sorrounded by the mountains that you can see behind the trees lining along the path to the entrance door.
The cozy atmosphere is created by Signora Mirella who lives here with her husband permanently and says she doesn't miss the hectic life of Florence. She says she enjoys the company of her plants, her animals and most of all the fresh air and open space.
In the morning, we love having an early breakfast while chatting with her about the different rythms of country life. Her morning table is very rich with home made jams and there is always a cake that has just come out of the oven.
Spring weather has been in Italy this year and this caused a small harvest, Mirella told us. Nonetheless, she managed to make, as promised, her delicious Frittata with organic zucchini from her garden and freshly laid eggs: so yummy!
The basil plants have humonguos leaves and a brilliant rich colour, I wonder how this is possible given that mine have tiny ones and are pale. Basil is perfect for making an excellent liquor that she is happy to share with her guests.
Facing the entrance door, is a mulberry tree and Signora Mirella said that it has produced so much fruit this year that it is difficult to use it all up.
Of course I offered my help straightaway! ;))
Before leaving, Silvano climbed up the tree and gathered so many mulberries until he filled a basket that I brought home. I froze a small quantity and made a big jar of jam with 2 kilos of fruit. Thank you Mirella and Silvano!


The mulberry tree 

Here is the mulberry tree. I have heard about it many times since I was a child, but for some strange reason I have never seen it. I have two memories tied to this tree: one memory is from long ago while the other is more recent.
The first is of a story that my grandma used to tell me and that still sounds unbelievable to me now, maybe because I'm extremely lazy....
My grandma, who was from the region of Veneto, lived in Treviso in the countryside. When she was young she learned to spin silk. At both her family house and then the one she went to live in with my grandpa, there were mulberry trees that were usually planted along the wine rows.


Those trees remained unused until the birth of their third child, my father. The day after the happy event my grandpa had the "fantastic" idea to bring her wife a present. So, he came back home with an ounce of silkworms!!!!
This present was certainly original, but the above-mentioned silkworms, in order to form a cocoon around themselves, needed to be fed mulberry leaves every 2 hours for 40 days ! So my poor grandma used to get up every 2 hours to feed both my father and  the silkworms. Whenever I asked her to repeat the story we would always end up laughing. Every single time I would wonder aloud  why my grandpa couldn't have just given her a diamond ring! At that point she would laughed even harder and excuse my grandpa’s behavior claiming that at those times they were lucky if they had enough to eat. Producing silk was a means of earning some money so diamonds were definitely not on her wish list: it was 1939....
 
My second memory tied to the tree deals with the story of Pyramus and Thisbe that I studied at University with my Professor of Romance Philology.
The story, told by Ovid, inspired the anonymous author of the courtly novel "Pyramus and Thisbe" in the XII century.
Many of you may know it, but I'll  summarize it for those who have never heard it  and for me. I like the story very much and reread it on occasion!
 
The protagonists, the daughter and son of 2 opposing noble families of ancient Babylon, have loved each other since they were children. Unfortunately, their parents object to their feelings and forbid them to meet.
Being apart only causes their passion to grow stronger, and then one day Thisbe discovers a hole in the wall that separates her house from that of Pyramus. The hole allows them to communicate and to express to each other their shared love pains. One day, against their parents’ will, they arrange to meet under a mulberry tree. That night Thisbe is the first to arrive but she gets frightened by the sight of a lion whose muzzle is dirty with blood  from killing its prey. Thisbe runs away, but as she goes she drops her veil which, when stepped on by the lion, gets stained with blood.
When Pyramus arrives and finds the blood-stained veil under the tree, he believes that Thisbe has died and plunges his sword into his broken heart. Before dying, Pyramus prays to the gods that they retain the memory of his sorrow. In that moment, the berries that until then had been white become black.
At the end, Thisbe comes back and sees her loved one, lying on the ground, dying. Her pain is so strong that she decides to join him in death. Before dying, Thisbe asks that their ashes be put in the same urn. Now they rest together in love and peace and the tree has been producing dark berries ever since, in memory of their love.


Crostata di more

Crostata is the Italian for jam tart and it is a tipycal dessert here. I love it but unfortunately I have been hopeless at making it until now. So thanks to Francesca and Marco, the youngest friends that i have; my classmates from University with such a knack for cooking, I'm glad they shared this recipe with me! 
The idea of precooking the disk of dough is genius for cooking it evenly and getting a crunchy base, this is the first time I have made a Crostata that I'm satisfied with :))

Ingredients:

250gr flour
150gr butter
2 egg ylks
100gr powdered sugar
vanilla extract or 1 Tbs grated lemon rind
mulberry jam

In a stand mixer, beat butter and sugar. Add the egg yolks and beat until incorporated. Add flour all at once and mix until it forms a ball. Refrigerate for 30 mins. On a baking sheet, roll the dough and cut a circle that you can cook in tart ring or pan. Bake at 175 for 20 mins or until golden. Spread the surface with jam. Cut strips of dough and arrange over the jam. Cut small circles of dough that you will press around the border to seal. Bake for another 10 mins.
