Polenta con crema di spinaci ai pistacchi

Sta arrivando la primavera quindi mi voglio sbrigare a mettere l'ultimo piatto tipicamente invernale.
L'inverno è stato lungo, buio e piovoso e le prime giornate di sole mi confondono un po', non sono più abituata.
"Sorry about the weather", dice la mia amica inglese quando vuole scusarsi per aver toccato un argomento così banale, insomma lo facciamo tutti, tutti prima o poi si lasciano sfuggire una considerazione sul clima.
Allora? Cosa si fa quando inizia la primavera? Ad esempio si possono fare nuovi progetti...
Oggi mi sono svegliata con il desiderio di essere da un'altra parte, il più possibile lontano da qui e mi sono domandata: "dove vorrei andare in questo momento?" Ci ho pensato un po' ma non mi e' venuto in mente niente, il pensiero di partire per un lungo viaggio proprio non mi attira. E poi la soluzione ce l'ho, in fondo lo so come va a finire ma prendo tempo anzi perdo tempo. Non ho bisogno di andare lontano infatti vado in Toscana, ogni anno e' così, penso, penso, penso e poi torno sempre li' ed è sempre un piacere.
La Toscana è la mia vacanza, la mia primavera, il relax che aspetto per tutto l'inverno.
Il primo weekend toscano è appena passato, breve ma intenso, ad Arezzo in compagnia di un fantastico gruppo di cultori del cibo. Abbiamo mangiato, chiacchierato e riso tanto, non c'è niente di meglio per cominciare la nuova stagione. Grazie ai nuovi amici del forum di cucina Coquinaria, questo è stato il lungo viaggio che desideravo e mi e' piaciuto tanto.

La ricetta di oggi: mio marito ha portato questa polenta dalla montagna e l'abbiamo preparata insieme, è una polenta ai funghi porcini. Ci abbiamo messo dei pomodorini, la mozzarella, poi abbiamo abbiamo preparato una crema con gli spinaci e il latte a cui Gianni ha aggiunto dei pistacchi che hanno dato un sapore più deciso e intenso.

Ingredienti x 6 persone
500gr polenta
2,5 l acqua
sale
500gr pomodorini
300gr mozzarella
500gr spinaci surgelati in foglie
latte
50gr pistacchi più alcuni per decorare il piatto
erba cipollina

Portare l'acqua salata ad ebollizione, versare lentamente la polenta e mescolare. Cuocere per circa 10 minuti o secondo le istruzioni. Versare la polenta in una teglia da forno. Cuocere gli spinaci con un pò di olio d'oliva. In un robot da cucina ridurre i pistacchi in polvere, aggiungere gli spinaci e un pò di latte. Frullare fino ad ottenere una crema densa. Disporre gli spinaci sulla polenta, aggiungere i pomodorini, la mozzarella, pistacchi ed erba cipollina. Cuocere a 180° per circa 30 minuti.

Polenta with cream of spinach and pistachios

Springtime is arriving so I want to hurry up and post this recipe which is my last typical winter dish.
Winter was long, dark and rainy and the sunny days which are beginning to arrive are disorienting me, I'm no longer used to the sun.
"Sorry about the weather", this is what my English friend says when she wants to excuse herself for touching a silly subject.
So? What do we do when spring arrives? We can do new projects....
Today I woke up with the desire to be somewhere else, as far away as possibile from here and asked myself: where would I like to go at this very moment? I thought about it a little but nothing came to mind, the idea of all the preparations for a long journey did not appeal to me.
But now I have the solutions, deep inside I know it but I waste time circling around it with my thought. I don't need to go too far from here, I can go to Tuscany.
Every year it's the same thing, I think and think and think and always end up in Tuscany and it's fine.
Tuscany is "my holiday", my Springtime, the relaxation I've been waiting all winter long for.
My first tuscan weekend in Arezzo has just passed. It was short but full of beautiful feelings, spent with a fantastic group of food lovers. We ate, talked and laughed a lot and there is nothing better than this to start the new season. Thanks to my new friends from the cooking forum, this was my desperately needed "far away trip" and I enjoyed it very much.

As for the recipe of today, my husband brought this polenta from the mountains and we prepared it together, it's a porcini mushroom polenta. On top we put some cherry tomatoes, mozzarella cheese and then we blended some cooked spinach until it was creamy. Gianni added some crushed pistachios which gave a more distinct flavour with a hint of nut. Quick to make and a pleasure to eat!

Ingredients:
500gr polenta
2,5 l water
salt
500 gr cherry tomatoes
300gr mozzarella cheese
500gr frozen spinach
milk
50gr pistachios plus some extra for decoration

Bring water and salt to a boil. Slowly drizzle in polenta, stirring constantly. Continue to stir until polenta is thickened, for about 10 mins. Pour into a baking dish. Let cool. Cook the pinach with some olive oil. Set aside. Put the pistachios in a food processor and grind them into a fine powder. Add the spinach and some milk and blend until creamy. Top polenta with spinach, cherry tomatoes, mozzarella, chives and pistachios. Cook at 180° for about 30 mins.
