Dopo tre giorni in Toscana sono tornata a casa, in Toscana c'è tutto quello che mi serve quindi la maggior parte delle vacanze la passo lì, il resto in Alto Adige.
In Toscana ci sono le terme, la natura, le colline senesi, la tradizione culinaria insuperabile e Firenze. Il primo ricordo che ho di Firenze, dove ho voluto festeggiare l'esame di letteratura all'Università, è nella Chiesa di Santa Maria Novella dove il mio adorato Giovanni Boccaccio immagina che, nel 1348, si incontrino i 3 giovani e le 7 fanciulle della sua splendida opera. Quel giorno è stato l'inizio di una corsa tra musei e palazzi antichi che si è conclusa con la mostra delle acqueforti di Rembrandt, non potevamo chiedere di più. Ma Firenze è anche un insieme di stradine piene zeppe di negozi, dove lo shopping funziona a meraviglia, meglio senza marito e in compagnia di un'amica. Anche questa volta è andato tutto bene, sono tornata carica di cose meravigliose, da indossare, da mangiare e da guardare. Infine a Firenze c'è una cosa ancora più importante: in quella splendida città c'è una delle più grandi fan di Paul McCartney, la mia amica del cuore Patrizia. Pat, Emanuela ed io ci muoviamo sempre insieme, siamo compagne di Signing Session e di concerti e fin dall'inizio i nostri amici ci hanno soprannominato le 3 Meduse. Come se non bastasse, anche il marito di Pat e i suoi amici sono fans dei Beatles e tutti muniti di chitarre, come del resto mio marito. Dove c'è Patrizia c'è musica e cibo di ottima qualità perchè Pat è anche una grande cuoca: Pat non è ora di iniziare un food blog?

Canzone del giorno: Things We said Today perchè finalmente sono riuscita a farle cantare insieme a me e ai chitarristi presenti, tutta la canzone, dall'inizio alla fine!

Ingredienti: 300gr di cous cous 350 ml di acqua olio d'oliva 2 melanzane 1 spicchio d'aglio 1 vaschetta di funghi (450 gr) 1 bustina di zafferano 1 cucchiaio di curry 1 cipolla 3 cucchiai di uvetta 200 gr di pomodorini basilico erba cipollina Per la salsa: un vasetto di yogurt e mezzo avocado

Mettere il cous cous in una ciotola, versare l'acqua bollente salata, un cucchiaio di olio, le spezie e l'uvetta e coprire per 15 min. In un tegame cuocere la cipolla tagliata a fettine sottili. Quando la cipolla è ben cotta aggiungere le melanzane tagliate a cubetti, il sale e cuocerle mescolando molto spesso affinchè la cottura sia uniforme. Dopo aver cotto le melanzane, preparare i funghi, in un'altra teglia scaldare uno spicchio d'aglio con 2 cucchiai d'olio, aggiungere i funghi, il sale e cuocere fino a che saranno teneri e il liquido di cottura sarà evaporato. Mescolare il cous cous con le verdure, aggiungere i pomodorini tagliati a meta, il basilico e l'erba cipollina. Per la salsa ho mescolato lo yogurt con metà avocado tagliato a pezzetti. Servire il cous cous a temperatura ambiente.

After 3 days in Tuscany I've come back. In Tuscany I can have everything I need so I spend there most of my holidays, the rest in Alto Adige.
In Tuscany there are baths, which I love, nature, the magnificent hills around Siena, an uncomparable culinary tradition and Florence.
My first memory of Florence, where I went to celebrate the complition of my first exam in Italian Literature at University, is in the Basilica of Santa Maria Novella. There, the great poet Giovanni Boccaccio imagined that, in 1348, 3 young girls and 7 boys first met in his superb masterpiece. That day was the beginning of a run around museums and old palaces which ended with the exibition of Aqueforti by Rembrandt, I couldn't have asked for more.
But Florence is also a tight tangle of streets full of shops, where shopping works wonders, better without husbands and with the company af a female friend. Even this time everything went well, I came home loaded with lovely thing to wear, to eat and to admire. Finally, there is something else to say about Florence: in that wonderful town there is one of the biggest fans of Paul Mccartney, one of my closest friends, Patrizia. Pat, Emanuela and I always move around together, we are companions of Signing Sessions and concerts, as a result our friends have called us the 3 Jellyfish.
As if this is not enough, Pat's husband and friends are Beatles fans and all equipped with guitars, like my husband after all. Wherever Pat is, ther is always music and food of top quality because Pat is also a good cook. Pat, isn't it time to start a food blog?
Song of the day: Things We Said Today because I was able to get her to sing the whole song, with me and the guitar players, from beginning to end!

Ingredients: 300 gr cous cous 350 ml boiled salted water olive oil 2 eggplant cut into cubes 1 clove garlic 500 g sliced mushrooms saffron curry powder 1 onion 3 Tbs raisins 200 gr cherry tomatoes basil chives For the salsa: 125 ml yogurt a half avocado

In a bowl put the cous cous and pour over it the boiling salted water, 1 Tbs olive oil, curry powder, saffron and cover for 15 mins. In a frying pan, cook the sliced onion with 3 Tbs olive oil, then add the eggplant, salt and cook stirring constantly so that all the parts are cooked evenly. Set aside. In another pan heat 1 clove garlic with 2 Tbs of oil, add the mushrooms, salt and cook until tender and the water has evaporated. Mix the coous cous with the vegetables, add the tomatoes, cut in halves, basil and chives. As for the sauce, it's optional: I mixed the yogurt with the half avocado cut into tiny pieces. Serve at room temperature.

E' un problema, perchè quando comincio non riesco più a fermarmi..."Lady Madonna lying on the bed, listen to the music playing in your head....." e poi continuo...tutto il giorno! "pa-pa-pa-pa-pa..........."Questa canzone mi aiuta sempre a tenere il ritmo quando le mie energie si stanno esaurendo e comincio a rallentare, provate anche voi a cantarla, potrebbe funzionare:))) Lady Madonna è il modo migliore per cominciare la mia giornata, cantare i Beatles è un dono, essere un fan è stata la mia fortuna.

La ricetta è di Mary Margaret Chappell e l'ho trovata sulla rivista Vegetarian Times. La versione originale si chiama Lemon - Gingerbread Ice Cream Sandwiches. Per i biscotti ho sostituito la melassa con il miele, poi ho sostituito lo zenzero, i chiodi di garofano e il pepe con il cacao. Il gelato invece è quello alla crema, la ricetta si trova sul libro base del Bimby. Infine ho preferito fare dei biscotti tondi, piuttosto che rettangolari, quindi ne vengono più di 12.

Ingredienti per 12 biscotti:

1/3 di tazza di melassa 1/2 tsp bicarbonato 1/4 di tazza di acqua bollente 2 tazze di farina 2 1/2 cucchiaini di zenzero 2 1/2 cucchiaini di cannella 1/4 cucchiano di: chiodi di garofano, noce moscata, pepe e sale 8 cucchiai di margarina 1/2 tazza di zucchero di canna
Mettere in una ciotola la melassa (il miele) e il bicarbonato, versare sopra lacqua bollente. Mescolare la farina, la cannella, il sale, lo zenzero, la nosce moscata, il pepe e i chiodi di garofano (o il cacao) in una ciotola grande. In una più piccola, lavorare la margarina e lo zucchero. Aggiungere il composto con il miele e formare una pasta soffice. Ho dovuto aggiungere un pò di farina a questo punto, la prossima volta diminuirò la quantità di miele. dividere la pasta in due e avvolgerla nella pellicola. Mettere in frigo per un'ora. Stendere la pasta tra 2 fogli di carta da forno, formando un rettangolo di 20x30 cm. Ho tagliato la pasta con lo stampino a cerchio e ho fatto dei forellini su ogni biscotto. Li ho lasciati sulla carta da forno e li ho cotti a 160° per 10 min. Ho farcito i biscotti e li ho rimessi in freezer solo per 15 min, avevo fretta, ma la prossima volta ce li lascerò per 30 min come dice la ricetta.
Gelato alla crema: 250 gr latte intero 250 gr panna 150 gr zucchero 2 tuorli 1 pizzico di sale 1 bustina di vanillina Versare nel boccale gli ingredienti, cuocere: 6 min 80° vel 3 Versare il composto in un contenitore da freezer largo e basso, rivestito di pellicola, lasciare raffreddare. Mettere il contenitore in freezer per almeno 12 ore. Togliere dal freezer, tagliarlo in grossi pezzi, inserirli nel boccale e mantecare: 20 sec vel 6 3 10 sec vel 4 ( io ho matecato solo per 10 sec vel 6).

Try to sing the song to yourself , you never know, it may work:)) Lady Madonna is a good way to start my day, singing the Beatles is a gift, being a fan has been my luck!

Recipe adapted from Vegetarian Times, Lemon- gingerbread ice cream sandwiches by Mary Margaret Chappel (I substituted honey for molasses and cocoa for ginger, ground cloves, nutmeg and pepper in the recipe) Sandwich filling: I made vanilla ice cream with thermomix

Ingredients: servs 12 1/2 cup molasses 1/2 tsp baking soda 1/4 cup boiling water 2 cups all purpose flour 2 1/2 tsp ground ginger 2 1/2 tsp ground cinnamon 1/4 tsp each ground cloves, ground nutmeg, ground black pepper and salt 8 Tbs soy margarine, softened 1/2 cup light brown sugar
Put molasses in heatproof bowl. Sprinkle baking soda over top. Add boiling water, whisk with fork. Blend flour , ginger, cinnamon,cloves, nutmeg, pepper and salt in a large bowl. Cream margarine and brown sugar in another bowl. Add molasses mixture; beat until soft dough forms. Divide in half, wrap each in plastic wrap and chill 1 hour. Put one dough ball between 2 sheets wax paper. Roll into 8 1/2 x 12 1/2 -inch shape; remove top wax paper. Using sharp knife cut dough into 12 2x4-inch rectangles. prink with fork. Transfer onn wax paper to cookie sheet; chill 30 mins. Repeat with remaining dough. Preheat oven to 325f. Grease 2 cookie sheet. Transfer rectangles from wax paper to cookie sheets. Bake 8 to 10 mins, or until set but still soft to the touch. When completely cool, spread vanilla ice creamonto bottom of one cookie: Pat filling down with spatula: Place second cookie on top (Pricked side up) and gently press down. Scrape away any filling that spreads past edges, and use it to fill in corners. Smooth edges. Repeat with remaining cookies. Wrap sandwiches in plastic wrap, and freeze until firm, about 30 minutes.

Vanilla ice cream: 250 gr full fat milk 250 gr double cream 150 gr sugar 2 egg yolks 1 pinch salt vanilla Add/weigh all ingredients into the Thermomix bowl, cook 6 min 80° speed 3. Pour in a large plastic container and freeze for at least 12 hours. remove from the freezer, cut into large pieces and mix on speed 6 for 10 seconds

Torta di rose

Questa è la prima foto di una ricetta preparata con il Bimby. Ci ho pensato molto prima di comprarlo e alla fine l'idea di cambiare un pò la cucina di tutti i giorni, che spesso è così ripetitiva, mi ha fatto decidere. Ora posso preparare delle buonissime vellute in 15 min, dei sorbetti alla frutta e dei risotti senza dovermi preoccupare di stare lì a girare e soprattutto a controllare che non stia bruciando tutto...una cosa che mi riesce molto bene!
Era tanto che volevo fare questa torta e devo dire che il prodotto finale ha superato le mie aspettative, è deliziosa. Io e mio marito ci siamo seduti in cucina davanti alla torta e dopo un attimo di esitazione difronte all'opera d'arte che non volevo rovinare, ho letteralmente strappato una rosa e l'ho divorata....in realtà c'è stata anche una seconda rosa:)))
La ricetta si trova sul libro base e credo che valga la pena provarla anche se non avete il bimby.

Canzone del giorno: I'm looking through you. Sono passati tanti anni da quando Paul ha scritto questa canzone, troppi...oggi sono malinconica e nostalgica...

Ingredienti per 8 persone: per la pasta 1 limone 20 gr di zucchero 150 di latte 1 cubetto di lievito di birra 3 tuorli d'uovo 30 gr di olio d'oliva 350 gr di farina 1 pizzico di sale per la farcitura 100 gr di burro ( ho usato 70 gr di margarina) 100 gr di zucchero

Mettere nel boccale la scorza di limone e lo zucchero, tritare: 10 sec. vel. 8 Aggiungere il latte, il lievito, i tuorli, l'olio, la farina e il sale, impastare 1 min vel. Spiga A questo punto non ho seguito la ricetta e come sempre, con gli impasti lievitati, ho messo la pasta nella ciotola e ho lasciato lievitare in forno a 35° per 1 ora. Ho steso la pasta in un rettangolo e per la farcitura ho mescolato la margarina con lo zucchero in un'altra ciotola e l'ho stesa sulla pasta. L'ho arrotolata e poi ho tagliato dei tronchetti di pasta di 5 cm, li ho messi in una teglia di 30 cm di diametro e ho lasciato lievitare di nuovo in forno finchè le rose sono raddoppiate di volume . Ho cotto in forno a 160° e non a 180° per 30 min.

This is the first photograph I've taken of a dish prepared with the Thermomix. I did a lot of thinking before buying it but in the end I decided to give my cooking a new twist since it had become a little monotonous. Now I make creamy soups, fruit sorbet and risotto in few minutes and without the pain of always having to stir or standing by the cooker to make sure that I'm not burnig anything, something I'm very good at doing!
I had been meaning to make this cake for a while and now that I finally have, I must say that the finished product has exceeded my expectations, it's delicious!
My husband and I sat at the kitchen table with the cake in front of us and after a bit of hesitation to ruin my work of art, I tore off a rose andd absolutely devoured it! Needless to say that rose easily turned into two...
The recipe is in the basic book and is worth a try even if you don't have Thermomix.

Song of the day: I'm looking through you. So many years have gone by since he wrote that song...I'm very nostalgic and melancholy today...

Place sugar and lemon zest into TM bowl and mill for 15 sec on speed... Add milk, oil, yeast, egg yolks and mix 10 sec on speed 7. Add flour and salt and knead on interval setting (the wheat symbol) for 1 min.
For the filling: beat butter and sugar for 1 min on speed 3. I used about 70 gr margarine and just mix the 2 ingredients using a fork.
In the event you don't have the machine feel free to email me and I'll give tou some pointers....
Put the dough in a mixing bowl and cover it with a wet cloth. Leave in a warm spot or in the oven for 1 hour at 35°. Transfer the dough onto a floured surface and roll it into a rectangular shape and spread with butter and sugar. Starting at long side, roll up the dough. Slice into 5 cm slice and pinch each seam to seal. Place each rose in a baking pan and let rise until doubled. Cook at 160° for 30 mins.

Panini alle mele e pere

Questi panini sono la mia passione, la domenica se ho un pò di tempo li preparo sempre, ne faccio una bella scorta e li congelo così ne ho sempre qualcuno pronto per la colazione. Con questa dose ne vengono circa 30, ci sono 40gr di margarina che volendo si può evitare, vengono benissimo anche senza. Li mangerò domani mattina con un pò di miele o marmellata e il solito amato cappuccino.
Canzone di oggi: oggi ho cucinato e Paul non l'ho ascoltato per niente, ma vedendo questi panini mi viene in mente la campagna, non so perchè, dunque la canzone è Heart of the country dall'album sublime intitolato Ram

Ingredienti: 500 gr di farina 320 ml di acqua tiepida 20gr di lievito di birra fesco 1 cucchiaino di miele 1 cucchiaino di sale 40 gr di margarina 40 gr di zucchero 50 gr di uvetta ammorbidita nell'acqua bollente 1/2 cucchiani di anice stellato 1 cucchiaio di cannella semi di papavero 1 mela e una pera tagliate a pezzetti

Ho sciolto il lievito nell'acqua con il miele, ho messo in una ciotola grande la farina e il sale da una parte. Ho versato un pò alla volta l'acqua con il lievito e il miele ed ho cominciato ad impastare. Ho aggiunto la margarina ed ho continuato ad impastare incorporando alla fine il sale. A questo punto ho unito la frutta, l'uvetta, la cannella e l'anice. Ho messo l'impasto a lievitare nel forno a 35° lasciandolo socchiuso. Dopo un'ora circa l'impasto è raddoppiato, la soluzione del forno è perfetta! Sulla carta da forno ho messo i panini, usando un cucchiaio. Ho decorato con i semi di papavero. Tempi di cottura: 250° per 3 minuti e poi a 175° per 15/20 min.

I love this small rolls, on Sunday whenever I have time I make a big supply so there is always one available for breakfast during the week. I'll have them tomorrow morning with some honey or jam and of course with my beloved cappuccino.
Song of the day: today I cooked and couldn't find time to listen to any Paul's song but looking at this rolls country comes to my mind, I don't know why...So the song of the day is Heart Of The country from the beautiful album Ram

Ingredients for about 30 rolls: 500 gr manitoba flour 320 ml warm water 20 gr yeast 1 tsp honey 1 teaspoon salt 40 gr margarine ( sometimes I omit margarine and they still taste good) 40 gr brown sugar 50 gr raisins soaked in hot water 1/2 tsp star anise 1 Tbs cinnamon poppy seeds 1 apple and 1 pear cut into cubes

Crumble the yeast into a bowl. Mix in the warm water and honey and stir to dissolve the yeast. In a larger bowl put flour and salt then pour in the yeast mixture and begin to work the dough, add margarine and sugar and knead for a few minutes. Move the dough to a floured surface, stir in the fruit and knead until evenly distributed. Place the dough in a bowl and cover with a damp towel. Let rise in oven at 35° until double. line a large baking pan with parchment paper. Use one tablespoon to scoop the dough and form into balls. Place on the baking pan and let rise again for 30 mins. Bake at 250° for 5 nins. Reduce temperature to 180° and continue cooking for further 15/20 mins.

Insalata di riso Venere

La classica insalata di riso proprio non la so fare, ci ho provato tanto tempo fa a prepararla ma non sapeva di niente. Forse perchè non capisco cosa c'entrino i sottaceti con il riso, anzi a dire la verità i sottaceti non mi piacciono quindi nella mia insalata di riso ho messo altri ingredienti. L'ho già fatta una volta per i miei Macca friends ed è finita, credo che sia buon segno!
Riflessioni sulla canzone del giorno: parlavo con Pat un mesetto fà, e ci siamo inventate una scena:
un giorno Paul, tanti anni fà, si è alzato la mattina e ha pensato: "ora faccio una canzone nuova". Ha preso la chitarra e ha scritto And I love her, una canzone semplicemente perfetta. Aveva solo 22 anni!!!!! Cosa facevamo noi a 22 anni??? Niente...o no...forse ce ne stavamo sedute ad ascoltare And I love her, il risultato delle fatiche di Qualcun altro.....

Insalata di riso Venere

Ingredienti per 4 persone: 300gr di riso bollito che ho messo sotto l'acqua fredda 1 patata dolce bollita e tagliata a cubetti 150 gr di feta 1 avocado 1 peperone olio d'oliva aglio origano

In un tegame antiaderente ho scaldato l'aglio e l'olio e ho cotto il peperone a pezzetti. Ho aggiunto la patata precedentemente lessata, il riso , il sale e l'origano. Al momento di servire ho unito la feta e ho mescolato bene. Nel piatto da portata ho decorato con fettine di avocado. In genere la preparo con molto anticipo e prima di portarla in tavola la scaldo di nuovo nel microonde per qualche minuto. Deve essere tiepida non caldissima.

Venere rice salad

I really can't make the traditional Italian rice salad, I tried to a long time ago but it was tasteless. Maybe because I can never understand the appeal of pickled vegetables and rice together or maybe because I don't like pickled period. So in my rice salad I put different ingredients, the ones you wouldn't normally find in an Italian salad. I once prepared it for my Macca friends and it was gone within seconds, I think it's a good sign!

Reflexions on the song of the day: Pat and I made up a scene: one day Paul woke up, maybe had a cup of tea and then thought: "I'm going to write a new song now!" and, without any hesitation, he wrote And I love Her, a simply perfect song. He was only 22!!! So we thought...what were we able to do when we were 22?? Nothing...no, maybe not...maybe we were sitting on a sofa, listening to And I Love Her, benefitting from Someone else's effort!!!!

Ingredients for 4: 300 gr rice 1 sweet potato, boiled and cut into cubes 1 chopped red pepper 150 gr Feta cheese olive oil garlic oregano 1 avocado 1 cup black pitted olives (optional)

Boil rice for 35 mins then place in a strainer and rince under running cold water. In a frying pan heat oil and garlic. Add the pepper, salt and cook until tender. Let cool. Add the rice, more salt if needed, oregano, olives and sprinkle with the crumbled Feta cheese. Transfer the salad to a large serving dish and garnish with the sliced avocado. Serve warm.
