Insalata di riso Venere

La classica insalata di riso proprio non la so fare, ci ho provato tanto tempo fa a prepararla ma non sapeva di niente. Forse perchè non capisco cosa c'entrino i sottaceti con il riso, anzi a dire la verità i sottaceti non mi piacciono quindi nella mia insalata di riso ho messo altri ingredienti. L'ho già fatta una volta per i miei Macca friends ed è finita, credo che sia buon segno!
Riflessioni sulla canzone del giorno: parlavo con Pat un mesetto fà, e ci siamo inventate una scena:
un giorno Paul, tanti anni fà, si è alzato la mattina e ha pensato: "ora faccio una canzone nuova". Ha preso la chitarra e ha scritto And I love her, una canzone semplicemente perfetta. Aveva solo 22 anni!!!!! Cosa facevamo noi a 22 anni??? Niente...o no...forse ce ne stavamo sedute ad ascoltare And I love her, il risultato delle fatiche di Qualcun altro.....

Insalata di riso Venere

Ingredienti per 4 persone: 300gr di riso bollito che ho messo sotto l'acqua fredda 1 patata dolce bollita e tagliata a cubetti 150 gr di feta 1 avocado 1 peperone olio d'oliva aglio origano

In un tegame antiaderente ho scaldato l'aglio e l'olio e ho cotto il peperone a pezzetti. Ho aggiunto la patata precedentemente lessata, il riso , il sale e l'origano. Al momento di servire ho unito la feta e ho mescolato bene. Nel piatto da portata ho decorato con fettine di avocado. In genere la preparo con molto anticipo e prima di portarla in tavola la scaldo di nuovo nel microonde per qualche minuto. Deve essere tiepida non caldissima.

Venere rice salad

I really can't make the traditional Italian rice salad, I tried to a long time ago but it was tasteless. Maybe because I can never understand the appeal of pickled vegetables and rice together or maybe because I don't like pickled period. So in my rice salad I put different ingredients, the ones you wouldn't normally find in an Italian salad. I once prepared it for my Macca friends and it was gone within seconds, I think it's a good sign!

Reflexions on the song of the day: Pat and I made up a scene: one day Paul woke up, maybe had a cup of tea and then thought: "I'm going to write a new song now!" and, without any hesitation, he wrote And I love Her, a simply perfect song. He was only 22!!! So we thought...what were we able to do when we were 22?? Nothing...no, maybe not...maybe we were sitting on a sofa, listening to And I Love Her, benefitting from Someone else's effort!!!!

Ingredients for 4: 300 gr rice 1 sweet potato, boiled and cut into cubes 1 chopped red pepper 150 gr Feta cheese olive oil garlic oregano 1 avocado 1 cup black pitted olives (optional)

Boil rice for 35 mins then place in a strainer and rince under running cold water. In a frying pan heat oil and garlic. Add the pepper, salt and cook until tender. Let cool. Add the rice, more salt if needed, oregano, olives and sprinkle with the crumbled Feta cheese. Transfer the salad to a large serving dish and garnish with the sliced avocado. Serve warm.

Veggie Parmentier

Più passa il tempo e più mi sembra che la qualità delle mie foto stia peggiorando.
L'unica scusante che ho consiste nel fatto che il mio blog, esclusa una lunga pausa, è nato da poco e non ho molto tempo da dedicargli, purtroppo. Di conseguenza scatto foto raramente, altrettanto raramente inserisco i miei post e quindi non faccio molta pratica con la fotografia. La scorsa settimana ho scattato foto per tre giorni di seguito ma ogni volta che andavo a controllarle al computer era una delusione.
Tuttavia, dopo un momento di disperazione mi sono ripresa ed ho cominciato a visitare il web alla ricerca di consigli sulla food photography. Finalmente, con mia grande gioia ho trovato un post fantastico, molto chiaro e facile da seguire. Voglio ringraziare: Helen per i consigli preziosi, Leemei per aver ospitato Helen, Staximo per la traduzione perfetta e Comidademama che, attraverso il suo blog interessantissimo mi ha portato al post di Helen.
A proposito di food blogs, voglio citarne 2 tra i miei preferiti, Fiordizucca e 101cookboks, sono tutt'e due delle ottime cuoche e fotografe di talento, le loro ricette sono veramente speciali e le loro foto sono splendide.

Ingredienti per 3/4 persone: 300 gr carote 300 gr patate 300 gr broccoletti siciliani aglio olio d'oliva 1/2 tazza di latte noce moscata 2 tuorli sodi 1/2 tazza di olive nere snocciolate 2 cucchiai di margarina Salsa al parmigiano: 1/2 tazza di latte 1 cucchiaino di fecola 2 cucchiaini di parmigiano

Lessare i broccoli tagliati a cimette per 5/7 minuti. Saltarli in padella con aglio e olio. Sbriciolare i tuorli e aggiungerli ai broccoli. Sbucciare le carote e le patate, tagliarle in grossi pezzi e lessarle separatamente fino a ridurle in purea. Condire le carote con olio, sale e aggiungere le olive tagliate a pezzetti. In una pentola mettere le patate, aggiungere il latte, la margarina e mescolare su fuoco medio per 3 minuti. In un coppapasta disporre le verdure a strati. Preparare la salsa scaldando il latte e aggiungendo la fecola e il parmigiano. Fare addensare per pochi minuti su fuoco basso. Servire la parmentier calda, passandola nel forno a 160° per 15 minuti oppure, se preferite, a temperatura ambiente con sopra un pò di salsa.

As time goes by, it seems my food photography skills are getting worse.
The only excuse I have is that I've just started my blog and I can dedicate very little time to it, therefore I shoot my pictures occasionally, I post rarely and I lack in practice. Last week I spent 3 days taking pictures, I couldn't put my camera down but whenever I went to load up my memory card it was a disappointment.
However, after a moment of despair I regained my confidence and began to take a look around the web searching for food photography tips. Finally, I came across a fantastic post : a brilliant tutorial, very clear and easy to follow. I wish to thank Helen for sharing your knowledge with us, Leemei for hosting Helen, Staximo for the perfect translation and Comidademama who, through her very interesting blog, brought to Helen's post! Talking about food blogs, I wish to mention 2 of my favourite bloggers, Fiordizucca and 101cookboks: they are both creative cooks and talented photografer, their recipes are to die for and their pictures are just amazing!

Ingredients for 3/4: 300gr carrots 300 gr potatoes 300 gr broccoli garlic olive oil 2 hard-boiled egg yolks 1/2 cup milk nutmeg 2 Tbs margarine 1/4 cup pitted black olives For the parmesan cheese sauce: 1/2 cup milk 1 tsp potato flour 2 tsp parmesan cheese

Cut broccoli into florets and boil them in salted water for 4 to 7 minutes. In a skillet, sautè in oil and garlic. Peel the potatoes and carrots, cut them into large chunks and boil them separately until tender. Make a purè. Season the carrots with salt, oil and add the olives roughly chopped. In a small pan melt the margariine, add the potatoes, salt, milk and nutmeg. Stir for 3 minutes. Using a serving circle arrange the 3 vegetables mixture in layers. You can serve at room temperature or warm, then place in oven at 160° for 15 minutes.

Adoro i biscotti, mi piace troppo il profumo dei biscotti nel forno che si diffonde in tutta casa. A chi non piace, vero?
Purtroppo fare i biscotti non è una tradizione nella mia famiglia e a dire la verità non ricordo, nella mia infanzia, che le mamme delle mie amiche li facessero. L'unica cosa che preparavano era il ciambellone, buono ma sempre quello.
Bene, spero che questi biscottini siano l'inizio di una nuova tradizione a casa mia.
La canzone del giorno è Put it there
Prorio ieri stavo pensando all'intervista in cui Paul spiega come ha ottenuto quel particolare suono di sottofondo: sfregando le mani sui jeans, le idee non gli mancano! Sono sicura che le mie amiche, Pat e Manu, ricordano bene quella scena, come me ;))

Ingredienti

200 gr farina 100 gr fecola di patate 170 gr margarina 5 tuorli sodi 100 gr zucchero a velo vanillina marmellata di albicocche

In una ciotola mescolare la margarina, la vanillina e lo zucchero. Aggiungere la farina, la fecola e i tuorli setacciati fino ad ottenere un impasto morbido. Far riposare in frigo per un'ora. Formare delle palline di pasta, schiacciarle leggermente tra le mani. Formare una cavità al centro e metterci un pò di marmellata. Mettere i biscotti sulla teglia rivestita con carta da forno. Cuocere a 180° per 15 minuti o anche meno, bisogna toglierli prima che cambino colore.

I adore cookies, I love the aroma of freshly-baked cookies wafting through the house. You may say, who doesn't?!
Unfortunately baking cookies was not a family tradition and to be honest I don't recall, in my childhood, my friends mother's making them. In Italy we usually have what is called "ciambellone" a plain cake served with vanilla powdered sugar. Very quick to make, there are thousands of versions and you could easily meet a mother claiming her recipe is a light one if not the best!
Well, I hope I started what might be a new tradition for me and my husband :))
Song of the day: Put it there I was thinking, just yesterday, of when Paul explained, in an interview, how he obtained that particular sound that you can hear in the background: he rubbed his hands over his jeans!! He is not lacking in ideas, isn't he? I'm sure my friend, Manu and Pat, have that scene impressed in their mind like me ;))

Ingredients:
200 gr white flour 100 gr potato flour 100 gr powdered sugar 170 gr margarine 5 hard-boiled egg yolks vanilla apricot jam
Mix together butter, sugar and vanilla. Add flour and sifted egg yolks. Form into a soft dough. Refrigerate 1 hour. Roll the dough into small balls and squeeze them a little, then press the center with with your thumb and place 1/2 teaspoon of jam into the depression. Place the cookies on a parchment lined baking pan. Bake in preheated oven at 180° for about 15 mins or until the cookies are firm but not brown.

Insalata con polpettine di melanzane

Oggi fa freddo e piove, una bella insalata fresca è proprio quello che ci vuole! No, sto scherzando, questo piatto sarebbe più adatto all'estate ma visto che durante le feste natalizie mangio troppo ad un certo punto sento il bisogno di un piatto leggero.

Ingredienti per le polpette: 3 melanzane sbucciate e tagliate a dadini 1 cucchiaio di pane grattuggiato 1 uovo 2 cucchiai di parmigiano 1 mazzetto di rucola tagliata sottile 2 pomodori secchi 1 cucchiaio di pinoli
Lessare le melanzane per 30 min, scolarle e lasciarle raffreddare. Scolarle di nuovo per eliminare tutta l'acqua, io le lascio nel colapasta, ci poggio sopra un piatto fondo piccolo e con una bella pressione sono ben asciutte! Verso tutti gli ingrendienti nel robot da cucina e li frullo fino a ridurli in crema. Formare le polpettine e cuocerle nel forno preriscaldato a 200° per 30 minuti.

Insalata per 4 persone: 250 gr di spinaci 100 gr di rucola 4 carote tagliate a striscioline 2 finocchi affettati 2 cucchiai di semi di girasole 4 cucchiai di olio d'oliva 1 arancio 200 ml di yogurt (uso quello che preparo con la yogurtiera che è buonissimo, non troppo denso e soprattutto non aspro) olive nere pomodorini olio

In un tegame grande saltare a fuoco alto le carote e i finocchi nell'olio. Mescolare continuamente fino a farli diventare croccanti. In una ciotola preparare il condimento: versare l'olio, lo yogurt, la buccia e il succo dell'arancia e il sale. Preparare il piatto da portata facendo un primo strato con l'insalata e la rucola, disporre poi le verdure cotte e infine le olive e i pomodorini. Condire con la salsa allo yogurt.

Salad with eggplant balls

It's cold and rainy, a fresh salad is just what I need! No,I'm joking, this dish would be more suitable to summer time but as I'm eating a lot of rich food during this Christmas Holidays I feel like having something light and low calories now and then.
Do you like it Pat?

Ingredients:
eggplant balls: 3 eggplant, peeled and diced 1 Tbs grated bread 1 egg 2 tbs parmesan cheese 1 bunch arugula coarsely chopped 2 sundried tomatoes 1 Tbs pine nuts

Boil the eggplant for 30 mins, drain and let cool. Drain again to eliminate all the water. Combine eggplant, cheese, bread egg and arugula and blend until creamy. Form into balls and bake in preheat oven at 200° for 30 mins.

Salad for 4 people
250g baby spinach 100gr arugula 4 carrots cut into strip 2 sliced fennels 2 Tbs sunflower seeds 4 Tbs olive oil 1 orange 200ml yogurt (I prefer homemade yogurt because it's not sour) pitted black olives cherry tomatoes olive oil

In a large skillet put the carrots, fennels, seeds and olive oil. Cook, over high heat, stirring
frequently until crispy. Combine yogurt with olive oil, the zest and juice of the orange. Season with salt. In a dish arrange the salad, garnish with the olives, tomatoes and cooked vegetables. Serve with the yogurt dressing.

Pane alle olive

Le canzoni di Paul si dividono in almeno 3 categorie:
quelle che ho ascoltato di più, quelle che ho cantato di più e quelle che oggettivamente considero le più belle.
A volte la stessa canzone rientra in 2 categorie o anche in tutt'e tre, dipende dal giorno, dal tempo etc.
Alla prima categoria appartiene Fixing A Hole, durante uno degli anni delle scuole medie l'ho ascoltata quasi tutti i giorni, tutto il pomeriggio, non riuscivo a smettere, secondo me aveva un potere incantatorio. Quel periodo, forse il 1982, lo ricordo come il mio anno psichedelico, il secondo in realtà perchè il 1967, l'anno in cui uscì Sgt. Pepper è quello in cui sono nata.
Alla seconda categoria appartiene She's Leaving Home, che non ho ascoltato così spesso ma che ho cantato tanto e ancora lo faccio, dall'inizio: " Wednesday morning at five o'clock as the day begins...".
Alla terza categoria appartiene Back in the Ussr: un capolavoro, voce splendida.
Dicevo che ci sono almeno tre categorie perchè ognuno di noi fans ha le sue, forse ne ho dimenticata qualcuna importante, non so.
Per la ricetta, a proposito di categorie, scelgo la cosa che mangio di più: il pane, anzi, per la precisione ne mangio troppo, questa sarebbe un'altra categoria!


Ingredienti: 250 gr di farina di grano duro 250 gr di farina manitoba 160 ml di acqua 160 ml di latte 1 bustina di lievito di birra secco attivo 1 cucchiaio di sale 1 cucchiaio di zucchero olive verdi olio d'oliva
Setacciare le farine in una ciotola. Scaldare l'acqua e il latte fino a raggiungere i 35° circa e versare sulla farina insieme al lievito e allo zucchero. Aggiungere il sale in un angolo della ciotola lontano dal lievito. Lavorare gli ingredienti, raccogliere tutta la farina e incorporare il sale per ultimo. Coprire con la pellicola e lasciare lievitare per 2 ore. Stendere la pasta, con un pennello passarci l'olio d'oliva e cospargerla con le olive. Arrotolare la pasta nel senso della lunghezza e tagliare dei dischi di pasta spessi 2 cm. Posarli sulla teglia in cui avrete messo un foglio di carta da forno e lasciare lievitare per altri 45 min.
Preriscaldare il forno a 250 e infornare per 10 min, abbassare la temperatura a 180 e lasciare cuocere per altri 20 circa.

Olive bread

Paul's songs are divided into, at least, 3 categories:
The ones I have listened the most, The ones I have sung the most and the ones I consider objectively the most beautiful. Sometimes the same song falls into 2 or all 3 categories. It depends on the day, the weather, etc....Belonging to the first song is Fixing a Hole, during secondary school I used to listen to it everyday, for almost a year, all afternoon! I don't know why I chose this song, maybe it had got an enchanting power, I couldn't stop! I like to remember that time, maybe 1982, as my psychedelic year, my second actually, because I was born 1967 just when Sgt. Pepper was released. In the second categories there is She's leaving Home, same album. It's a song I haven't listened to so often but it's certainly the one I have sung a lot and I still do it, from the beginning: "Wednesday morning at 5 o'clock as the day begins...."Third categories: Back in the USSR. a masterpiece, wonderful voice.I was saying that there are at least 3 categories, in reality more categories can be found: each one of us fans has its own. As a recipe, talking about categories, I chose the thing that I eat
the most: bread. Actually I eat too much bread, but this should be another category!

Ingredients: 250gr manitoba flour 250gr durum wheat flour 160ml water 160ml milk 1Tbs sugar 1Tbs salt 1 sachet active dry yeast olive oil green olives

Sift flour in a bowl. Heat milk and water until warm and pour over the flour together with yeast and sugar. Add salt in a corner of the bowl avoiding contact with the yeast. Begin to work the ingredients, using up all the flower and incorporating salt at the end of kneading. Rest the dough covered with a cling film for 2 hours until doubled. Roll it into a rectangular shape, brush with olive oli and spread with olives. Roll up the doug beginning with long side. Cut into 2 cm slices and place in a pan over a baking sheet. Let rise again in a warm place about 30 mins. Heat oven to 250°. Bake for 10 mins, reduce heat to 180 and bake for 20 more mins.
